Beer cheese soup

Does anyone have a good recipe?

1/2 gallon chicken stock
1 onion
1 bunch celery
2 cups cream
2cups beer of choice
3 cups cheese of choice
1/2 pound butter
1/2 pound flor
sautee the onion and celery in butter. can also add garlic. add the flour to make a roux. cook for a few minutes. add your beer and hot stock. cook untill thick around 10-15 minutes. add the cheese a little at time until melted. cook another 5 minutes. add the cream and season as you wish. put in blender or use immersion blender and enjoy

I would never use pale ale in cheese soup, now sierra nevada tumbler is awesome in beer and cheese soup

Looks very nice except for the IPA part. I second Tibs’s assumption that a brown ale might work better.
