Beer pairing for multi-course meal - suggestions wanted

I am looking for a few suggestions on beers to bring to a nice dinner. Menu changes daily so I have no idea what I’m getting myself into. Obvious progression of amuse, truffle, fish, shellfish, offal, game meat, steak/duck, cheeses, desserts. Already have 3 375ml bottles of wine (champagne, red, botrytis). Mainly looking to supplement the wine as it’s most likely a 4 hour meal. Normally I just bring 3-4 750’s of wine which is just the right amount of liquid but way too much alcohol for my body. Because of this, lower ABV is preferred on the beer side. Multiple courses requires versatility. Would like to stay away from Dupont and anything on the sour/funky side of things.



In the past we’ve done things like Berardus 12 which was great at the time but too high of boost. Hoppy new school Pale Ales that were great in between the food but didn’t pair the best with the menu.


What would you bring? I have a few days to trade if you want to get specific. I have ideas myself, leaning malty like Fullers London Porter or Founders Porter. Chimay Dorée could work. I’d love to do something like along the lines of Taras Boulba but I don’t think I have that fresh around me.

Would probably do schlitz if I was going to do a light lager.
