I was thinking about doing a unique berliner aged on fruit. I really like the flavor of jackfruit, but I’m not sure it would do well in a light, tart beer. Has anyone ever attempted this one? If so, what were your thoughts and if not, how do you think it would work?
I wouldn’t say kumquats and jackfruit has anything in common. Kumquats are sour as hell, and I think they’d be great in a berliner weisse, but they taste nothing like a jackfruit. Neither do dragonfruit nor gooseberries.
