Viscosity or mouthfeel is what dextrins add to a beer. These are mostly unfermented sugars and long-chain starches. A higher mash temperature or crystal malts such as Cara-Pils are what many use, together or in combination, depending on the style of beer you are trying to brew.

IMO, the only way to build this character is to end up with a high finishing gravity, so lots of dextrins and a less attenuative yeast strain are the ways to go.
