Can dry hopping add bitterness?

Dry hopping will not add to any iso-alpha acids, so it won’t affect measurable IBUs.

There are, however, many that believe that the beta acids will contribute to a perceived bitterness.

As someone that dry hops a whole lot though, I don’t really perceive any change in bitterness from dry hops.

I think dryhopping can change perceived bitterness if you add enough and let it sit long enough. Most of my beers are dryhopped with anywhere from 3-5 ozs. of hops in a 5 gal. keg - sometimes, if they aren’t starting to taste vegetal, I’ll leave them in there until the keg kicks - after about two weeks you can really notice the difference. 11/10/2009 7:22:32 PM

That’s not exactly accurate. The alpha acids don’t go into solution when you dry hop...

And the hop pellets don’t dissolve completely, either. Sometimes they can be seen as a green haze or even tiny green particles in your beer. Yes, I know that these should be socked or allowed to settle out in order to serve a clear beer, but that does not always happen, especially with cask beer, and bar staff that like to jockey casks.

I’ve also experienced an aggressive use of dry hopping that imparts a grassy character. Has anyone else experienced this? Would you consider that a bitterness?

Have experienced it, but nah, it’s astringency, which falls under mouthfeel. It comes from the tannins present in hops and most any plant matter.
