I would be extra cautious with sanitation. Put the pre-boiled wort in an airtight bucket or something, maybe flush with CO2 if you’re over-zealous. I’d be concerned, but not overly, about Lactobacillus delbruckii getting into the wort and starting a fermentation. Even if you boil off the bugs during the boil, the lactic acid will remain.
That being said... you should be fine.
