I have used this recipe and its great:

Be sure you have catch pans all over the bottom of your oven because it makes a mess! I have also used the same recipe on my grill and it works just as well with less cleanup.

Jansky (weatherdog) has the best recipe.

We’ve done several five course meals with bacon as the focal point and my Executive Chef has candied just about every part of a pig, anyway. Email him scott at flixbrewhouse dot com. Let him know that you got his info on RB.

He is going on vacation in like 2 days, so email him now.

In fact, 2 weeks ago he used some of my ’95 Triple Bock to make a cayenne candy glaze to prosciutto. It was good...but not bacon good.

I’m making a cayenne candied bacon on Sunday. BM me after that if you want to know how it turned out.

Why would any perfectly sane chef waste prosciutto with such shenanigans? That’s weak shit, and your chef should be scrolled past.

My girlfriend got me dark chocolate covered butcher thick cut bacon, a bacon peanut brittle and a dark chocolate coffee crunch bacon toffee bar. Let me say this, so far they pair up well with every recent barrel aged beer i’ve opened lately.

Weatherdog best candied bacon ever.
The guy in November made like 10lb of it for my buddy’s (Gonzoillini) and mine birthday bash tasting. It was a hit, each time he would open a new container people would mob him for it.
