Iím a Certified Cicerone and hereís my breakdown:
Know draft in and out including cleaning, pouring, maintenance, setup, and glassware.
Know the vocabulary of flavors and food pairing and how all that basically works, as well as the basic pairings for different foods and styles and how to explain why they work.
Know styles and the brewing process including ingredients
know off flavors, brewing defects/flaws and the like.
The tasting portion is pretty difficult and a lot of people fail that part. You have to be confident in blindly recognizing styles and obvious flaws that would warrant taking back a beer form a customer.
