In the crock pot. 1 large corned beef in the pot with spice packet and 1 bottle of beer, something dark. cook on low 5-7 hours, or until done. 1.5 hour before finishing, add potatoes. 1 hour before finishing, add cabbage and and carrots.

Any suggestions for improvement?

Your grandfather would have called it, "bully beef," correct?

This is less cool now that you edited your post.

Make sandwiches with the leftovers. mayonnaise, ketchup, capers, gherkin = 1000 island.

Sliced onions, fresh rosemary, red wine (as an alternative to dark beer). Add water to braise. Baste frequently with pan drippings while cooking.

Large brisket would be what, 6 pounds? Are you feeding a lot of people? What temp is "low" ? How long did you soak it?

(but I’ve never done red wine and am suspicious) Cloves and a little cinnamon, too.

You might be putting the spuds in too soon, boiling potatoes that long might have them completely gone. Carrots and cabbage can boil for hours, not the pomme de terre.

Turn off crock pot. Drive to cleveland. Eat at Slyman’s.
