have some extra sharp cheddar (white) and some mild swiss cheese that I bought for some crackers and triskets. Which beer type will go with either of these? I know nothing about cheese pairing. Thanks.

I had some Lost Abbey Avant Garde (a Biere de Garde) paired with goat cheese - that was really good. I’d think the style would go well with the swiss.

A nice IPA would go really well with the cheddar. It has to be a more citrus hops based than grassy. IMHO.

I would pair the cheddar with Jolly Pumpkin Bam Biere, the mild swiss with Dogfish Aprihop.
