Been on a big meat-grinding kick lately and was considering making some fish burgers on Friday. Any suggestions of cuts of fish for this application? I was thinking an equal blend of something meaty and something flavorful, so I was leaning toward a mix of crab and bay scallops with just enough egg white and panko to bind it. Any suggestions?

Shrimp, with ginger, lemongrass, cilantro some chili and a touch of citrus zest.

Everything has to go in the grinder? Any combo of crab, scallops, shrimp, and/or lobster. Personally, I would do a surf’n’turf of prime rib and lobster!

It doesn’t HAVE to go in the grinder, just looking for a change of pace from the usual grill or sear. Some good-looking recipes on that link btw!
