  ome friends and I are going to do a comparative tasting of 4-5 different IPAs. But, I haven’t been able to find much good info on food pairings with IPAs. I was thinking something spicy like curry or maybe a pasta with pesto. I was also considering some smoked Gouda. Any ideas? Thoughts? Thanks.

Are you doing American IPA’s or traditional IPA’s? How hoppy are you thinking?
Creamy soft cheeses, cantaloupe and other musk mellons and roast meats. If you’re thinking of a pasta keep it simple with just an olive oil garlic and basil with parmesan.

The classic pairing is Buffalo wings and blue cheese.
Bitter counters hot and breaks fat...so go with that. If you want cheese, something sharp like a rich gorgonzola. If your thinking main dish, I like the idea of curry as long as it is packing some heat.

I like IPAs with Thai, Indian and Mexican dishes, spicy lemon grass soup,Curried butter chicken and garlic naan, Camarones Ala Diabla, etc....

I’ve found that Dubliner cheese goes well with most IPAs.

Fatty fish goes well if the variety isn’t too too hoppy... Salmon, Tuna.

ditto, Mexican and Tex-Mex is what I prefer. Also regular old pizza is good with hoppy beer.

Is there a food that doesn’t go with IPA? Off the top of my head, I can’t think of any.
