British summer ale:

7# golden promise
1# wheat malt

mash at 150 for 10 min. and runoff as fast as you can.

90 min. boil
40 IBUs EKG @60 min.
1 tablet whirlflock @20 min.
1 oz. each Cascade and EKG @5min.
.5# sugar @2 min.
1 oz. each Cascade and EKG @0min.

Chill to 68 and pitch 1 pint starter of 1968. Next day rise to 70, and the next to 72. Let sit at 72 for 3 days. Transfer to secondary and crash to 32 for 1 week. If bottling, do so with .8 oz. dexttrose/finished gallon.

For my money, I’d replace the cascade with challenger, and dry hop it with an oz or two of challenger as well... it’s so tasty in beers like this.
