Sorry, I can’t suggest Mexican, but if you’ve never been to Choice City Butcher & Deli, you definitely have to go there at some point. Their Reuben’s are awesome and they have a sweet tap selection.

There’s a lot of meat packing facilities in that area which means lots of Mexicans who live around there so my suggestion would be to find a Hispanic Market and ask them where they go

Got nothing for Ft. Collins, but if you happen to end up in Boulder, check out Efrains II, just down the road from Avery for some killer pork green chili.

It’s certainly a popular joint for margaritas, but the food itself is considered by most people to be pretty terrible. I personally only went there once many years ago, and it was indeed unpleasant. But everyone’s taste in food is different. I think it’s pretty tough to find truly good Mexican food along the front range, and why that is, I don’t know...too many cater to gringos, I guess. There’s probably some decent stuff along Federal in Denver, which is loaded with Mexican stores and restaurants, but that doesn’t help you much in Ft. Collins. *shrug*

Choice it is. With several breweries in that area, I should be good to go. Will also ask around for other spots while in town.

Rio is decent for food. I’ve liked Los Tarascos (sp?) on College. Big City Burrito has yummy burritos. :)
