Does anyone have a good guacamole recipe?
(something you’ve made and eaten, not something you quickly looked up on the Net, couyon)

3 Fresh Avocados
3 Fresh Tomatillos
1/2 small white onion
2tbsp Fresh Squeezed Lemon or Lime
Pinch of Salt
Combine in bowl and mix well.

3 Avocado
1 bunch Green Onion
some Cherry Tomatoes
some Cilantro
Jalapeno Pepper
1/2 Lime
Finely chop the green onion, tomato, pepper and cilantro. Add avocado. Mix. Sprinkle lime juice over the Guac.

Thanks - very simple recipe; it looks good.
I think I’ll use 1-2 creole tomatoes (the big, deep red, variety), my wife has a few from her garden.

I have some fresh parsley on hand. No cilantro. Would it really make a big difference?
I like the idea of green onion in anything, neg.

The above recipes look ok, but I like to add a can of those diced hatch green chiles to spice things up a bit. :D

The Tomatillos add a great tart acidity to the Guac whereas the tomatoes just muck it up and kill the avocado flavor.

1 avocado, mashed with fork (don’t overmash, this isn’t baby food, blech)
1/4 small white or red onion, finely chopped
1/2 medium tomato, chopped
Juice of 1/2 lime
1 chili (jalapeno, serrano, whatever you like; alternatively, add some chipotle powder, ~1/2 tsp).
Coarsely chopped cilantro, about 1/5 of a bunch
1-2 cloves fresh garlic, minced; garlic powder works fine too
Salt to taste (I’d guess about 1/4 tsp.)
