I am the prez of a new brewclub here in Valdosta.

Our brewing "theme" for the meeting 2 months from now is pale ale. I will brew a couple of awesomely delicious late hopped brews, but I also want to stir the pot a bit with some craziness.

Suggestions?

A Brett B pale ale is definitely in order (thanks, CLevar), but open to other ideas.

As for the regular brews, I will do a tested and true moderately mixed malt Citra pale ale and a golden promise single malt pale ale of some sort (Mosaic, Moteuka, whateva I feel like at the moment - suggestions?).

But, help me stir the pot, literally and figuratively, with an idea for that 3rd or 4th pale ale to brew up and bring. Let’s blow some minds, RateBeer!

90% Munich malt, 5% gambrinus honey malt, 5% carapils. 3oz warrior @ 60min. 2oz of Palasade at 15, 5, and 0.

Sour pale ales are very good, if you want to do something a little unusual that keeps the nice features of a simple pale ale.

Pale ale malt, some oats and acid malt to taste (I’d add 15-20%), then huge flameout and dry-hop additions of something very fruity, like citra. The clean acidity combines with the fruitiness of the hops and makes the whole thing seem really juicy.

Worth trying out, if you haven’t done anything like it before.
