ebastian sent me a bunch of Homebrews in our last trade and I just couldn’t help but bust open the 2001 Imperial Stout this evening.
It had a beautiful rich mocha head and really matched any Impy for looks I have had to date. Nice oily lacing to boot.
Nose was very complex with loads of Molasses, Chocolate and espresso.
The taste was every bit as complex as the aroma.Very defined flavors and I would stack this up against my favorite Imperial Stout.Nice finish with a bit of dryness.
A great job and now I am even more excited to open the other 4.

I remember having a number of his saisons a couple of years ago - they were inventive, and really excellent. It is so easy to oversweeten saisons, but his were crisp and clean. One had prickly pear! 5/15/2008 9:17:17 PM

I was lucky enough to taste this one and it was superb. Better than 80% of the Imperial Stouts I’ve had. This guy is a brewing master. Thanks for sending some to Eric, and thanks to Eric for sharing some. 2001 vintage and so rich and tasty. 5/15/2008 9:20:46 PM

You sure do. I have a Samichlaus clone that’s 9 years old, and still very tasty. Since it’s kegged, and carbonated with CO2, it can’t oxidize from exposure to air. It keeps getting better & better with each passing year. thumbs up

Agreed, he recently gave me a barrel aged belgian that really knocked my socks off. Gives me great hope to someday brew beers that good!!

Tom still have one bottle of that homebrew stout you gave me in April. Enjoyed the the first two that still debating wheather to take the last one to Hellbillys next weekend or keep it for myself.
Like the chocolate and coffee flavors and wasn’t as dry as some stouts are and ABV was well hidden. Good stuff and thank you. thumbs up

One of the nice things about living in So. Arizona is that I live very close to Sebastian. I’ve had the good fortune to try 3 of his homebrews over the past year. All excellent. I’ve got two more I’m going to share with friends over Memorial weekend. Really looking forward to it. He’s also been coaching me along with my first few batches of all-grain homebrew which went very smoothly.

Oh yeah, those reviews of his. thumbs up

We need to get together with Tom next month and share our homebrews.
