Anyone have a good lobster Mac and cheese recipe? Or at least some cheese suggestions? Gruyere, good cheddar and nice parm?

Every time Iíve had lobster mac and cheesed, I feel like the lobster gets lost and you lose the sweet flavor of the lobster. Anyone ever had it where the lobster stood out?

Me too. I want my lobster to be fresh, sweet and not burdened with a sauce unless itís in a bisque.

How doth one cheeseth the sauce unamuck of good lobsterly intentions?

- I see people go the bechamel - gruyere route with pasta, or maybe the mornay idea adding grated parmesan. Thoughts?
