Good question... I would hesitantly suggest poaching white fish in a hefe or witte, then tell us all how it went

As far as general use goes doppelbocks are probably the most versatile. With seafood about the only thing I know is tasty for sure is beer batter, but I am guessing that is not really what you are going for. I think ceviche made partially with a sour of some sort could be interesting. Living in the midwest I don’t really think I would ever trust the seafood I can get ahold of to try it.

Belgian styles are far more versatile for cooking purposes that Dopplebock is.

In my experience doppelbocks are somewhat better integrated into more dishes, though they don’t seem to impart as much of their own tasty character... But as I am not exactly a "master beer chef" here I am not gonna disagree.
I will add that Unibroue seems to be a great choice for belgian brews to cook with. In my area they are some of the most reasonably priced belgian style brews and are always tasty to cook with.

That sounds pretty good.. I just caught some Calico Bass so I’ll try poaching some in Hanger 24 Orange Wheat or The Bruery’s Orchard White.. I’ll let you know how it turns out.
