Maudite foo pairing

would like to do a beer/ food pairing dinner and want to use Unibroue Fin Du Monde, Trois Pistoles or Maudite. Anyone have any recipe ideas for tuna/ chicken dishes as well as grain or vegetable dishes that are dairy-free and would pair with one of these beers? Please provide spices/ flavorings you would use with the particular beer. I’m open to any ethnic cooking style.

He did actually ask for the pairing to be dairy free. That rules out cheese. for the la fin du monde, you could do a lemon tuna (or any fish) dish.

I’d go with a nice dry rubbed roasted pork tenderloin.
Baste the meat with olive oil and rub on some spices such as: salt, pepper, basil, and fresh chopped garlic, chive, and/or scallions.

I would try two pairings - Maudite with Dave Grohl and then maybe Taylor Hawkins or Nate Mendel with Trois Pistoles. That’s just my opinion; I don’t want to be your monkey wrench. 6/20/2008 3:58:42 PM
