  ust asking for some help and some suggestions. I’ve never brewed a wit before and I’d like to try to make one from my mothers surprise birthday party in about a 1.5 months. Any suggestions? Maybe something with a fruit addition

I made one with orange & lime peel plus ginger. My coworkers actually liked it so it must have been successful
6# Two-Row Barley
4# White Wheat
1# Flaked Oats
1oz Liberty Hops
Zest of 6 Navel Oranges
Zest of 2 Limes
4oz Grated Ginger Root
Wyeast 3944
The peel & ginger were added right before knockout.

I’ll post my recipe when I get home. You need raw, flaked, or torrified wheat to make a proper wit, I don’t think malted wheat will cut it.

Whatever you do, aerate the hell out of the beer and make a big starter. The wit strains are notorious for crapping out prematurely. Also, csbosox is correct in that you need unmalted torrified wheat. I wouldn’t use oats and would go something more like this:
5# Pale Malt
5# flaked wheat
For hops, I’d go with something like Goldings around 60min.
Spicing is up to you. Chamomile, ginger, lemon peel, cumin, savory, cinnamon, orange peel, all spice, galangal are all things I’e used in witbiers in the past. The only must use spice is coriander.

With regard to the wit...Can I do a single mash infusion or do I have to do a triple d?

heres the recipe i used an i was quite happy with mine
4.5lbs belgian pils
4lbs flaked wheat
1lb flaked oats
.5lb rice hulls
hersbrucker 60min (enough to get you about 15-18IBUs)
2oz orange zest (i just peeled the orange zest as opposed to shaving it off with a zester or microplane) 5min
.5oz crushed coriander 5min
white labs WLP400 Belgian Wit (build a starter)
ferment right around 70
OG 1.050
IBU 18
ABV 5%
