Corazon Brewing is a Latin-themed homebrew collective. They havenít said much about their plans.

Big Dick Brewery puts dildos on their tap handles at events. No joke. Their name is a good indicator of how seriously they take their self-promotion efforts. Donít expect this one to come to fruition anytime soon.

Off Key was going to be a brewery but itís indefinitely not going to happen. Brian, whoís in my homebrew club, has had some setbacks and has opted not to go the brewery route. I will say, though, that he brew a ton of beer (has a 55 gallon system), most of which is pretty fantastic stuff.

One other brewery coming up that Iím aware of in the next 24mths or so is Gullster Brewing (though the name may change?). The proprietor is finishing up his brewing school learning with a stint at Metropolitan for his internship.


whereís gullster planning on hanging itís shingle?


Unknown at this point, in the city, near Lincoln Square as far as I know, though.

Received the following email from Solemn Oath today:

Itís Almost Time

Solemn Oath Brewery has entered the final phase of buildout and we are now one step closer to getting our beer into your hand. We have received TTB approval, our 15-barrel brewhouse arrives in a few weeks, and the taproom is nearly complete.

As always, thank you for your continued support of local craft beer. If you would like to follow our progress as we get closer to market, check us out on Facebook and/or Twitter. We post pics/info and, more importantly, make fun of each other fairly regularly.

In the coming weeks we will keep you informed on our timing and our plans for opening. It is an exciting time for beer in Chicagoland and we look forward to joining our Illinois craft brethren in providing you with another unique and local option.

That area might as well be Rockford...except a slightly nicer, less gunshotty Rockford. I hope they do well though!
