have a bottle I’ve been saving to share with my sister, it will be her first time trying it. I wanted to pair some cheese with it to snack on. Any suggestions? I was thinking Brie or a nice Triple Creme but that might be too easy. How about something a little more out of the box like some sort of Blue. Any other snack suggestions?

Avoid soft ripened cheeses, IMO, they would not compliment the beer. I think something with a crystalline texture and a touch salinity would be a better pairing. Parmigiano Reggiano or an aged Gouda would be a great pairing. 6/28/2009 6:07:48 PM

With a sour or tart beer, also consider a really rich chocolate. 67 and above percent. I recommend Missouri’s own, Patric. 6/28/2009 6:58:41 PM
