On a beery note for the pork belly itself, id recommend a 4-5% bitter.

I agree, Bateman’s Combined Harvest would work well. Depending om the tripel the esters could conflict with the actual fruit too much.
I would think an abbey single, a belgian wit, or a lightet saison would be nice.

Fullers ESB(though mass produced on the same scale as batemans is a superiour beer) or something like stone pale ale/levitation would go well. Something that you can have a few of and not get too pissed anyway.
