Refermenting a sweet lambic

Anyone ever try to take a bottle or two of Lindemans Kriek, put it into a sterile growler, put some yeast in there and an airlock on the top? I’m listening to an old episode of The Brewing Network with the head brewer from Ommegang (Randy, before he left to join New Glarus) who said he does this all the time with Lindemans and that once you eliminate the sweetness, there is a ton of interesting funk in the beer.

The problem is that at least some portion of that sweetness isn’t residual malt sugars, it’s Acesulfame potassium - artificial sweetener.

I’d be really curious to know how much of each represents the perceptual sweetness in the finished beer. Apparently there’s sufficient residual fermentable malt to keep going, though, as evidenced by Randy’s experiments.

It’d be fun to try.

I’ve added champagneyeast ( yes, indeed, no brett ) to 2 bottles of Lindemans kriek . think we’ll know the result in about 2 weeks ?

Do normal homebrew stores sell stoppers with the airlock hole to fit these 750’s? Cause if mine does, I’ll totally do this shit. Just don’t want to commit to buying $60 worth of crappy lindemans to fill a 1 gallon carboy.

Yah, you shouldn’t have a problem finding small stoppers that fit bottles. Like the Beer Som, I’m curious if even brett can ferment the artificial sweeteners I’ve heard they use in these.

Suspecting we won’t be able to ferment the artificial sweeteners no matter what, but champagne yeast should get it as dry as possible. Just wondering if it would yield something close to an Oude Kriek,since the are none of any kind to be found on the shelves these days.

Boost, bring one of the empty 750s to the store with you and find a stopper that fits. That way you avoid buying a bunch and returning, blah blah.
