  picked up a bottle of Consecration from Russian River over the weekend, and I was wondering what I should prepare to eat with it. I was wondering if anyone had good food pairings with it. To make things more difficult, my New Year’s Resolution was to go pescetarian, so no meat besides seafood is allowed. Any and all advice or banter is desired.

Something like red wine, so perhaps salmon or ahi. Likely not a white. Might go well with scampi.

I would vote no food period. I don’t like drinking really complex beers with a meal because I just kind of gulp down the beer rather than savor it. The beer is amazing on its own, maybe you could pair it with a cheese or something.

I might try some smoked salmon with this, going picnic.
I can also see just with apples, pears, sweet baguettes, some raw veggies and soft and semi soft cheeses from mild to robust. This beer will cut through most anything except for maybe strong garlic, ammonia (over-ripened brie) and stinky feet (Chimay cheese).

I had a bottle with some trail mix from the vending machine at the bowling alley on league only night and it was fantastic.
