Russian River Consecration Food Pairing Advice

I might try some smoked salmon with this, going picnic.

I can also see just with apples, pears, sweet baguettes, some raw veggies and soft and semi soft cheeses from mild to robust. This beer will cut through most anything except for maybe strong garlic, ammonia (over-ripened brie) and stinky feet (Chimay cheese).

Actually it pairs really well with Chimay Cheese. The soft variety (smelly) because despite its strong odor its a quite mild cheese. I think a really assertive blue might get lost and something to delicate in flavor might not stand up. I also paired this recently with pork barbecue flatbread and it rocked. I think we were snacking on some Carbonzola Cheese at the time to (which is a badass cheese in its own right).

Sally Jackson makes a Goat cheese that is wrapped in grape leaves, the cheese has a very earthy and barnyardy character to it that should pair very well with the tobacco notes of the consecration.
