well i am sensitive to acidity but i found that to be one of the most acidic beers i’ve ever had. so i’m hoping some time will round that out a bit, but perhaps it will lose some good qualities to it.

If anything, that beer will dry out and lose a lot of its subtle depth as it’s already hit its peak, IMO.

The Epic 07 is a strange one... I’m hoping it holds up well... but I have my doubts about it...

But of the ones I socked away... I have the most hopes for the Behometh from Three Floyds... tried one bottle fresh and it was nowhere near what I was expecting... but I have high hopes for the Old Ruffian, the Expedition Stout, the BA Blackout, and the Stone IRS as well... I already know the Old Guardian is drinking quite well now...

Soon I’ll be popping some of the bottles I put down last fall/winter and shall see how the Double Bastard, Old Jubilation, Delirium Noel, Old Crustacean, and the Unibroue brewed Trader Joe’s Vintage 2006 held up... I’ve already been disappointed in the Celebration from last year...

Past it’s peak, if you ask me. I’m drinking my last bottle right now -- getting rid of it before I gave into temptation -- and the sourness has definitely kicked up (along with a bit of brett), with the sweetness disappearing. Still a fantastic beer, but I’m glad I’m drinking mine now.

Mmm, talking about Unibroue, I’m sure, what is it, 16 now? will age well.

Angel’s Share, eh, it’s so damn good and perfectly aged right now, I don’t know. Not worth it, I say.

Alesmith Decadence 2006 could be quite interesting after 5 years.

Ommeggedon, obviously.

Damnation Batch 23 should do swell, but I don’t know if it’ll ever lose that edge.

Drie Fonteinen Hommage is a necessity, IMO. Absolutely not worth drinking yet. I’m going to give my other bottle at least 3 years.
