It’s pretty standard to go for an IPA with Chinese as they tend to cut through the grease, but I reckon you should be radical and have a go at a Dark Ale - medium hops alongside caramel and toffee notes can linger on the palette, playing with the chilli in a lot of Asian meals, and if the dish has a lot of ginger the subtle chocolate and hazelnut notes of some Dark Ales really play nice.
