"If you like lambic you will like lambic with almost any food." Maybe.

I haven’t got past dark chocolate. Any suggestions?

Fresh radishes.

Interesting and easy. Animal protein suggestion? Or does that not seem good? Cheddar?

Pairing it with Pad Thai worked pretty well for me. 6/17/2009 6:47:13 PM

For some reason, I really like brie with my lambic when I feel like cheese. I will also usually have some fresh fruit and vegetables. Another simple indulgence I enjoy with lambic are borage flowers. The have a mild honeydew/cucumber taste to them and compliment the radishes well (and also present nicely as they are the only bold blue flowers that are truly edible that I know of). The fresh radishes serve as a paletizer. When they are available, I actually prefer them over table water crackers in between samples when I’m doing a multi-beer tasting (they’re also good for you which is a bonus).

One last oddball thing I sometimes like with lambic is a small piece of fresh cayenne pepper. Cayenne pepper is hot, but not overwhelming. Especially in tiny pieces (about 1/4-1/8th of an inch at a time in moderation). There’s no science to this, but I think it’s the endorphin rush that I like from the cayenne peppers.

True, it’s not a snack, but another good suggestion.
