What to pair with wild duck?

Cooking up a pair of wild ducks tomorrow(a mallard and a wood duck if it matters), and Iím not sure what will go well with these beauts. Any ideas?

I would say some Backwoods Bastard, Tres Pistoles, or a dubbel. Donít overpower it with a BB stout. Possibly a wee heavy scotch ale.

Big belgians are a good idea--the Trois Pistoles would definitely work, as would any big Unibroue offering.

I would go with a really crisp and highly carbonated gueuze, but thatís not to all tastes. Anything even a little funky and gamey on the plate (which I like, to be clear) tends to pair well with the sharp and cleansing qualities in a lambic, and the funk works nicely as an accent. Cantillon Vignerone would be a good one too.

Maudite or another strong dark ale. Whatís the one by dogfishead?

Totally depends on how you are preparing it. Sauces? Spicing? Etc.... But, my ultimate recommendation would be a red wine anyway - why ruin beer by pairing it w/ a food? ;)

Coincidentally I am drinking a bottle of Adnams Broadside Strong Original right now, and think it would pair superbly with wild duck. Tame duck too, if it matters.

Doppelbock (Celebrator, Andechser) . Especially if you glaze the duck. Westmalle Dubbel would also work nice. And my third alternative would be a Duchesse Bourgogne.
