Right. And it pisses me greatly that ’off cuts’ like Bavette and ’offal’ such as beef cheeks become trendy & more costly. These are the bits that are hard to cook and present just right, so they accordingly were the cheap fare of the economically under-classed. Till now.

Checked the general beef and pork belly price development over the years? Disgrace - and certainly not only justified by higher consumption...
