Perception. People see duck as exotic. Same reason chefs can charge people $40 for a small plate of garbage animal parts you can get at your butcher for $1 a pound.
Right. And it pisses me greatly that ’off cuts’ like Bavette and ’offal’ such as beef cheeks become trendy & more costly. These are the bits that are hard to cook and present just right, so they accordingly were the cheap fare of the economically under-classed. Till now.
