aking an imperial summer beer around 1.075 OG... using wy’east Kolsch and I’m not gonna make a starter. Will the yeast survive and do their job, or am i making a mistake here by not making the starter?

any advice is mucho appreciated!cheers!

you should make a starter for virtually any beer, but especially for any high gravity beer.
Get that starter going and wait until Sunday to brew.

Don’t bother with the starter and enjoy your imperial summer ale with a final gravity of 1.025. Nothing more refreshing in the summer than an underattenuated beer! Make a starter or pitch a few packets of dried yeast. 5/9/2008 11:37:55 PM
