Located just opposite of Spezial, this place has a very similar feel. A bit newer and less rustic. Also the beer is maybe not quite as stellar, but still good. We took a sweep to the Schwemme and didn’t stay for long as we were on a tight schedule.

Right across the street from Spezial, this place is also in an old building. The beers are alright, but the ambiance feels a bit rough. We were in the self-service garden. If you are on a tight schedule, this is the first place I’d cut out.
We stayed at the hotel. The non smoking rooms where huge. Only downside was the lack of AC since the rooms faced out onto the street. The only way to bring the temperature down was to open the windows during the night but then you had to deal with the heavy traffic outside early in the morning. The service went from extremely friendly to very unfriendly. Beers where the worst in Bamberg (by a large marginal). Breakfast was ok. The beer garden was rough and very smoky even when it was almost empty.
A bit rough Biergarten, not very cosy. Food and service was okay. Not a must place.

We actually stayed in the rooms above the brewery, and had breakfast each morning. Great place. Nice clean rooms, if a bit small. Good jumping off place to explore Bamberg. Near to the Hauptbanhof. The brewery itself has a "magic window" , like a lot of places in Bavaria, where you can walk in and order a beer. There in an area where you can sit down for table service. The service is good. The beers are overall good. The food is decent. It is an attractive place, with an outdoor Biergarten. The prices are reasonable.
