Brugge. Dress up for Den Dijver! Classy and… expensive. This is a top-restaurant. Excellent food with good beer combinations. Had a 4 courses set menu with beer-selection. The Talegio-cheese was superbe, the combination with Duchesse de Bougogne not really surprising.
The interior is a combination of (restored) old and modern (art). Table cloths and cristal. Very professional and friendly staff.
Visit this place when you like some luxery now and then, First save a few Euro’s

A white table resuturant focusing on beer pairings. The menu is limited and based on seasonal items and beer list is not as large as one mint expect but excellent. I’ll confess I expected more options in the lambic dept but after talking to the owner I now know that American beer tourists prefer beers like cantillon that are not popular with Belgian public. We had the prix fix option and each course was well paired and artfully prepared. D t come expecting traditional food. These guys are doing very modern fine dining with local ingredients.
Service was good and friendly.

Very nice restaurant, and the beer pairings were very nice. My wife’s apertif was a hop infused champagne, which was very nice. Service was excellent, obviously cared about their craft, and explained each beer (on a basic level) and how it complimented the food. The food was excellent. Decor is old world belgium mixed with modern accents...

Serving delicious food with a glass of frothy belgian beer. You can enjoy excellent food with good beer combinations.

On our trip at Brugge we where in Den Dyver. Alle the food was accompagnied with special selected beer. We enjoyed it very much.

On my fourth trip to Brugge I finally made up my mind to try Den Dyver. I knew this was going to bust the budget, but hey, I´m a Pisces (Mar. 19) who ignores budgets! Anyway, last time (after the Kerstbierfest in 04´) in Brugge I hit Erasmus for wonderful moulles and aged Stille Nacht on tap...wow!
Den Dyver is more classy (and expensive), with cloth table cloths and fine decor (including fun white tree twig sculptures & creative nude pics of the kitchen staff). There was a 20 Euro pre-fixed lunch meal, but I went for the full monty: what they called a lasagna was some tortillas with chicken sausages with tasty yellow sauce, served with Witkap Stimulo bottle (and a half!). Then came a St. Bernardus 6 with medium rare kangaroo over cabbage, and pigeon mousse with wild mushrooms. Last was a cheese tiramasu with Lindeans Faro dated Jan. 06´. It was about a 60 USD lunch, which is a tad crazy, but hey, you only once...or is it we just don´t remember how many lives we´ve lived?!!! I´ll remember this meal.
You can order outside a pre-fixe menu...it´s all well prepared, gourmet food. I didn´t ask to see the beer list since it was included in my meal.

Wonderful accomodation, realy cosy.
Fast and friendly service. Not only in dutch, heard good French, English and German as well.
Not a large selection and not that cheap, but you do not come to a place like this for this reason.
You visit this restaurant for the food and the foodpairing. And let this be the best thing about this restaurant. I’d come back for sure!

Visited for a leisurely lunch on our day at the the Groeninge Museum. Very handy for that, as it is all of two minutes walk between the two. This is a lovely, modern dining experience, and for me, the first time I’ve had beer and food given serious attention as pairings in a restaurant. The pairings were respectable...though maybe a little on the safe side. And no beer menu to speak of apart from few that were chosen to go with the food.
My steak was perfectly rare and delicious, and Traci’s pork fillet had that wonderful wild richness of good pork cooked carefully, but the highlight of the meal for me was the fresh tarragon leaves that were sprinkled over my roasted carrots. I’d have never thought those flavors could be so shocking good together. Service was precise, attentive, crisply friendly.
Overall, this is an excellent, noteworthy restaurant, though perhaps not one you’ll want on your short list if your visit to Brugge is primarily beer-focused. It is rather expensive, and the beer choices are solid but not unusual.

Fin reastaurant, meget FIN.
Tjeneren lirer en standart remse af med omtale af øllet, på tros af modspil, gentager bare. Men god mad, men små portioner.
