Closed???? That is terrible!! I happened to fall upon this place iafter driving by after 1st and only paintball excursion - had some beer and properly went back another time for dinner. 1731 Dark really stood out to me. I thought the food was pretty authentic - beer excellent - actual service and server knowledge was unbelievably non- exsistant. 2 servers knew absolutely nothing about beer or Belgium.
Itís a sad day for sure - who could believe that this place would exist in Spring Hill!

NEWS UPDATE - As of 2/11/07 this brewpub is closed. The family drove an hour to eat there and it was closed. No mention on the website. Poor showing.
This place has a few good things and a few bad things going for it. Letís get the bad out of the way first: 1) The beer is served way too cold. All of my beers were in the 35-40 degree range. 2) Of the 4 beers on tap, one is a US macro light beer clone with almost no flavor or body. 3) The bartenders knew nothing about the beer. When asked what seasonal beer was the answer was "Summer". 4) The prices may be low, but the pours are small. My glass had a 13 oz mark on it and it was 1 inch above the foam line. Probably an 11 oz pour. 5) When you change beer types they "wash" your glass on this thing set into the bottom of the pour tray, rubbing the rim of your glass onto the brass right after the bartender had just wiped up with the same rag he was cleaning the bar with. yeesh. Now the good: 1) Correct glassware. 2) As someone else noted, the sampler of 4 3 oz beers and a 12 oz whole beer is $5. 3) All of the beers seemed fresh and well brewed, if on the lower end of the strength range to be in style. 4) Plenty of room to spread out at the bar or in a booth. 5) I didnít eat there but the food that others were eating sure looked tasty.

Not a problem to visit for me as itís close enough to the folks place. Big area without much ambiance. I did like the collection of bottles displayed over the dining booths. Food was a-okay and lots of it, though not especially memorable. My main take-away was that a sampler of 4 7 oz. pilsner glasses PLUS your choice of a 12 - 16 oz. based on your preference in the sampling was $4.99! Iím fromn the NYC Metro area so that was outstanding. The beers were overall quite well crafted.

So itís way out of the way of anything else so itíd be a weekend trip or like me who had to work out there for a few days and stopped in after work but still had to drive an hour or so to Tampa. Nice clean and old look to it. Wish they had more beers the 4 I had were good but 3 of them tasted the same, sampler is cheap 4 samples and 1 full beer for $5, I wouldnít recomend driving all the way out there just to go here but hit it up if your in the area, 4 beers gets pretty boring pretty fast. Service was excellent and the guy knew what he was talking about when a redneck asked "why isnít my glass frozen? I liked this place just not worth the special trip. Picked up a couple glasses for $4 a piece so that was cool also.

A nice, authentically Belgian place, but my only gripe is that the beers werenít that great and they only have four of them on tap. Food was pretty good though, as was the service.

This place is only a short jump from me, but I just never bothered to go until recently. I am a frigging moron. St. Sebastiaan was the first stop and the clear cut champ of my recent five brewpub mini-vacation that took me from Spring Hill to Lousianna and back. The beer is exceptional.
There are only four beers on tap, but they are all very good and the 1731 Dark is Amazing.
The food is of a very high quality. I mean far beyond anything you will get from a like priced chain like say an Outback. I love Outback by the way it isnít a diss to chains this place just has great food.
Another cool thing is St. Sebaastian is like a Belgian Beer Museum. I mean it is covered ceiling to floor with vintage Belgian beer bottles, brewing equipment, photos of the famlies history with beer making and many other amazing items.
I would say if you are in Tampa, St. Pete, New Port Richey, Tarpon Springs or anywhere else close it is 100% worth the trip.
This really is a top notch establishment and I am a variety whore so a place with only 4 beers has to be excellent for me to gush about it. St. Sebaastian is.

The selection of beer is limited to four beers on tap, none of which knocked my socks off. The food was delicious (we had great Cubans for lunch), but unless you happen to be close by, I donít think itís worth a special visit.

I was lucky enough to hit this place while on vacation. Very cool menu, good beer (although, if I remember correctly, they only had 5 styles). They do a fantastic job of trying to educate people about good beer, which I always love seeing. If I ever head through that part of Florida again, Iíll be stopping in here.

So, you probably want to know why this family has spent the last 350+ years to become an leader in the craft of brewing; Why the hell they decided to place this True -Belgian Micro Brewery in Spring Hill Florida????
Well I cannot answer this question, and none of the employees could answer it either.
The brewery / restaurant is absolutely AMAZING! A-Freaking AMAZING!
No cost was sparred in construction! The food is tremendous and totally Authentic! The beer is delicious and completely Authentic! Each of the 4 beers on tap are served in the proper sect of glassware. They have an amazing Belgian beer bottle collection to view only, and a KILLER Happy Hour from 1:00 Ė 7:00 Monday - Saturday. I recommend you get a Designated Driver to accompany you along on your trip, because the beer is un-resistible IMO, especially the Dark and the SpecialÖ whatever it might be when you arrive!
