Eaglemount Cherry Mead
Bottle pour at Eaglemount - Seattle, pours a clear copper amber, no real head. Aroma brings out gentle cherry cough drop, with a touch of fermented out honey. Flavour is dry, with earthy, fermented out cherry and honey. Not very mead-like and very lacking in any depth. Fine at best.

Flavour is very sweet, with lots of sweet cranberry, gentle tartness from the cranberry, and buried sweet honey. Not the most intense honey character but the cranberry is well-situated. Decent.

Eaglemount Log Cabin
Tap @ Schilling Cider House, Seattle. Pours pale yellow, lightly misted. Aroma has a gently sharp fruity profile, though not jumping out as a Spanish sidra style. Taste has a slick acidic wine-like fruity profile, with a light oak influence. Again, not jumping out as a Sidra style cider, but decent for what it is.

Bottle poured chilled into a sniffer. Light yellow and still. Aroma of sweet apple juice and floral honey perfume. Great taste initially when cold but this gets more floral and complex when it warms. Smooth, a little sweet, not too tart and very enjoyable. Fantastic!

light yellow, good clarity. A few bubbles. Aroma and flavor have some raw and some musty apple notes, but both are surprisingly full of strawberry. Specifically a cooked berry; I it actually goes quite well - sweet strawberry with tart apple, and the impression feints towards tart but never manages to balance the sweetness. no tannin to speak of; with acidity only moderately low this one never quite manages to beg another sip. Seems to be oxidized, though that isn’t always a bad thing. Moderately enjoyable, and a good introduction. A high carbonation level might help sharpen that finish, up the acidity, or the addition of a small % of bittersweets or a touch of oak. Sum of its parts is not all it could be, but still a good effort.

Pours a crystal clear pale gold with no head or lace. Nice sweet red apple nose with light apple skin presence. Creamy medium body with light carb. Honey comes through in the mid palate, but still under a very predominant apple presence, all very light and dancing and mild. Together they create a quality almost like a shortbread cookie. Doesn’t seem, in words, like it would belong there, but it’s very appealing. Mild sweet apple finish. These guys really know how to make nice soft, subdued apple stuff (ciders, etc.). They’re probably not on the road to making anything really explosively flavorful as their calling card, but for a balanced, harmonious, and restrained presence, these guys nail it time after time.

750, swingtop. Pours a crystal clear and very pale gold with nose head, lace, or legs. Several steadily rising streams of nucleation columns. Big fresh ginger nose; very dimensional--smells like it was just grated into your glass. Apples are way in the background but the sweetness balances. Creamy medium body, carb is very soft to the tongue. Lots of ginger and some red apple on the mid palate. Mild spicy ginger & apple finish.

750, ceramic swingtop. Pours a crystal clear pale gold with no head, lace, or legs. Much, much lighter in color than the photo might suggest. Big fresh crisp fruit nose; very pleasant and dimensional and natural. No apparent trace of backsugaring or flavor enhancement. Light still body. Amazingly delicious fresh fruit flavor. Shows no alcohol. Like a big glass of freshly squeezed fruit juice--no alcohol bite, no carbonation, but tons of fantastically dimensional flavor.

750, swingtop. Great crack and hiss on opening. Pours a crystal clear medium gold with a little ring of fizz and a fair burst of bubbles at the beginning. Nice tart, slightly funky nose. Truly that seemingly unpredictable complexity of fermented fruit, it gives you the sense that each batch might be a tiny little bit different. Nice acidic fruity sweetness to the nose. Rich tart apple and apple skin presence. Crisp light watery body with soft carb. A tiny little bit of pepper along with the fruit and sugar on the mid-palate, leading to a nice and surprisingly dry finish. Definitely a keeper.
