mcberko	4 Abbaye Hypocras 2008 vintage - thanks fiulijn. 750mL bottle, pours a cloudy orange amber with a few bubbles worth of a head. Aroma brings out lots of bees wax, leather, and light cardboard. Flavour is loaded with bees wax, wildflower honey, bready notes and caramel. Lots of bees wax, with medium sweetness. Old, but wonderfully preserved. Excellent. Sunday, March 18, 2018
Oakes	3.4 Abbaye Hypocras Hazy, light amber colour. This has a light sweetness. There's a lot of wood. Big spicy wood, lots of honey, and this has a whack of sweet, spicy, woody. The ginger and cinnamon is quite impressive, lends a great balance. Sunday, March 18, 2018

Flavour is mildly honey with a moderate sweetness, it does have a slight acidic character trailing with a bitterness that exposes the alcohol a touch. It is simple but still quite nice. Flavour is medium sweet, with light-medium acidity, treacle toffee, and wildflower honey. Not the most elegant mead out there, with a fairly light and acidic palate. Beer5000	3 Abbaye Hydromel Demi-sec 750 ml bottle. Clear, straw yellow body without any head. Aroma is mostly honey and alcohol with a faint hint of flowers. Flavor is medium sweet, mild honey. Even if the honey flavor feels a bit mild, it still a rather heavy brew, not very elegant but somehow bald and boozy with a hint of fruity acidity. Not very balanced at all. ClubGonzo	2.3 Abbaye Hydromel Viellissement Prolongé Bottle, from some medieval theme shop in Lyon, France. ABV is 15 %. Pours a clear pale yellow, near-white body with no bubbles. Nose is light honey, alcohol, wood and hints of nail polish and cardboard. Taste is tart phenolic tones, sweet honey, paper and hints of alcohol and faint nail polish again. fiulijn	3.5 Abbaye Hydromel Cuvée de Noël Corked bottle from the producer L1108A (bottled 3 years ago) Measured Final Gravity: 1044 Nice yellow color with some golden reflex and with some micro bubbles; there is a thin deposit in the bottle. Strong aroma, peculiar; the oranges are in evidence, giving an impression of Grand Marnier; light anise seed too and cinnamon. Sweet Mead, with good honey flavor and amusing spice mix, where again the oranges are mostly evident, but also sweet cinnamon, some soap. It seems to have a correct acidity level. The mouthfeel is semi-dry, with evident, generic, floral honey flavor; there is some unpleasant bitterness and a pungent alcohol presence; also some tannins and wood in the end. Unstylish; plain. Very nice and powerful spicy mead indeed. 2011-05-14, screwcap bottle, courtesy of Ungstrup; L0609R (2 years after bottling?), 13.5% ABV, 7-3-7-4-14=35 Cloudy blond color. Aroma of cinnamon, honey, lemon (this may be the ginger), straws. Syrupy mouthfeel; very sugary, and sweet, but at the same time with a fair degree of acidity to balance; reasonably good Mead flavor, with evident spices (cinnamon on top, a light bite from the ginger, and an elegant finish by the cardamom).
