(as pommette, of course) bottle that pours clear super light gold with a small white cap offering good enough retention and lacing. crisp biteable apples, never peary (which is kewl), faint peppery grisette, tart malic acidity, never overwhelming, integrated soft white woodsy spiciness, minerals. moderate carbonation, light body, dry, crisp and lightly tart cidery finish. this cannot get any closer to cider than this. tastes like a solid barreled cider.

bottle that pours unclear light but bright pink with a very nice pinkish head offering good enough retention and lacing. gently bretted plums, remaining semi-sweet plum sweetness, never jammy though, estery fruitiness, white spices, sweetish oak, lean but smooth peppery cereals, softly bittering herbs, tannins, salt and minerals. bright and healthy carbonation, light body - never watery even for a below five per cent and wild ale; semi-dry woodsy-peppery finish. very nicely done wild plum grisette.

bottle that pours clear light but very bright gold with a quite nice fizzy white cap, healthy bubbles. tons of fragrant and authenticly distinct litchees and peaches (impressive), lean golden grapes, very soft peppery acidity like a lemon and pepper duet touch - refined white and pink exotic peppercorns with a very soft heat, no heat from alcohol, minerals. bright and healthy natural carbonation, light body - very aerial for its close-to nine per cent abv; very dry even though not bone-dry tropical-citrusy finish. incredibly noble brut concoction with a delicate tropical touch. exceptionnal.

On tap at Le Cheval Blanc, pours a clear golden with a small white head. Nose actually smells more like a lager, with that malty, straw-like breadiness, with the hops sitting way further back. Flavour confirms this impression. This is more like a lightly hopped lager than it is an IPA. Good clarity but just nothing special flavour-wise. It’s alright.

On tap at Le Cheval Blanc, pours a hazy full golden with a small white head. Nose is very English in the hop department, with a decent bready malt backbone. Flavour is much the same, with bready malt and English hops. Not a big fan of the hop expression here. It smells much more promising than it tastes; maybe it needs the typical casking to blunt the flavours. Meh.

Le Cheval Blanc La Mer Trouble
On tap at Le Cheval Blanc, pours a fairly clear pale golden blonde with a small white head. Aroma reveals a really nice weat coast hop expression — there’s pine, dank weediness, some resins — and backed with a crisp biscuity malt. Flavour is clean, with piney hops, some resins, and crisp biscuity malt. There’s very low residual bitterness. I like these blonde IPAs — they often manage to be cleaner than the over-malted old school (I)IPAs. Very drinkable, yet I’d still hope for a more forceful hop character. Good.

On tap at Le Cheval Blanc, pours a hazy blonde with a small white head. Aroma certainly brings out the hoppy white wine tanginess from the NZ hops, along with rustic saison yeast and maybe some young brett that hasn’t yet had a chance to impart funk. Flavour is much the same, with a great blend of rustic saison yeast and white wine tanginess from the ample hopping. Not very funky, nor is the brett very detectable otherwise. I appreciate the rustic character and the incorporation of the NZ hops. Very good, despite it not being all that complex.
