Chimay Grande Réserve Vieillie en fûts de Bois 4.2
A dark brown beer, a head is medium and beige. Aroma is great, raisins, dark and dried fruits, also some fresh fruits and perries, chocolate and some barrel. Taste has dried fruitness, prunes and dates, herbs, hint of chocolate. Warming in the throat. Medium+ bodied, refreshning carbonation. The great beer. Feels fresher than the normal Grande Réserve, otherwise the same elements are there. Enjoyable.

Bottle, 330ml. A clear amber beer with a huge frothy head and lot of gas. Aroma is of Belgian yeast, citrics, alcohol and green apples. Taste is bitter with a dry Belgian character. Medium bodied with some carbonation and astringency. Kind of hoppy afertaste with a yeast finish that is slightly alcoholic.

Bottle, 33cl. Clear golden/amber with a creamy offwhite head. Aromas of citrus, fruity hops, cereal, Belgian yeast, alcohol. Medium bodied with moderate to fizzy carbonation. Dry and oily, with a deep hoppy bitterness and astringency, and a controlled sweetness for a tripel. Very pleasant farmhouse character and amazingly drinkable. Excellent, even slightly unorthodox tripel.

Massive longlasting fluffy white head, nice lacing, sits on top of a hazy light gold coloured beer. The ice cream cone effect. Spicy yeast, candy sweet malt, fig, fruity aroma. Matching flavours but this bottle has a lasting metallic note that doesn’t seem like it should be in the beer. I’m guessing this bottle hasn’t been stored well. Med-high carbonation, medium mouthfeel, dry finish with a lingering bitterness. Very nice beer but docked points because of the metallic note (will have to re-rate).

33 cl bottle, Vintage 2015. Served in Trappist chalice. Poured a very dark brown with a small frothy one finger ivory head. Aromas of sweet caramel, flowers, vanilla, cherries, banana, dark fruit, candy. Taste: Caramel, vanilla, candy sugar, dark fruits, banana, coriander. This is one fantastic tasting brew! Medium to full body. A very spicy, sweet frothy mouthfeel with a dry bittersweet finish. The best of all the Chimay!

I got this 75 cl bottle together with a huge order from @Beergium. The cork says it’s bottled in 2015. Best before December 2019.

The beer pours hazy, red-brown with a huge, fluffy yellow head. About two finger high in my new Trappist-glass.

Nose: Caramel malt, fudge, dried fruit, plum, floral and herbal spices. Taste: Sweet chocolate, nuts, caramel, coriander, molasses, oak and plum.
Mouthfeel: Creamy, silky and smooth. Light carbonation. Complex texture. A nice smooth bitterness at the end.

Another excellent beer from Belgium. This dark ale is very rich in aroma and spices. Pours a dark amber colour with a big, light beige head that lasts quite long. Aroma and smell is mostly caramel and biscuits. High content of alcohol is somewhat masked by the sweetness - but it does hit hard. Loving it.

On tap, Beergeek Praha: nice medium foam, good cling to glass, dissipated in a few minutes. A bit bitter, as I recall I prefer the overall balance of Chimay Rood (red) a bit more. My research of Belgian beers needs further refinement.... and with any luck shall continue apace. A few more sips reveal a delicate flavor unfound in Czech beers: an apples to oranges comparison and thus close to meaningless. The big downside to experiencing more Belgian beers is my increasing reluctance to drink the local brews. Ach jo! (Když mluvite český, rozumite)

Bottle at SBWF 2015. Short head. Clear brown color. Roasted and light caramell aroma. Light roasted malt in the taste and light belgian phenols. Aged bottle from 1997 in the same sampling. Aged aromas that is a litele too old. Big madrefication in the taste.

On tap at Taphouse. Served at fridge temperature into footed snifter reveals a hazy light golden body one finger white head that recedes somewhat, leaving film and lace. Aroma has notes of belgian yeast, baguette, pepper, and a hint of bubblegum. Oily texture, medium bodied, soft carbonation, and a lingering bitter finish.flavour is dry, with a moderate bitterness. I can’t say that i would want to be stuck on a deserted island with this as my only beer.

Bottle 330ml. Served at cellar temperature. Pours a cloudy golden orange with a dense, foamy white head that lasts wonderfully. Aroma is bready with orange citrus, dried pineapple, coriander, clove and notes of floral/grassy hops. Flavour is a light floral/grassy hop bitterness with coriander, white pepper, bready notes, orange peel, pear, a touch of straw and a dry finish. Light to medium bodied, with a creamy mouthfeel and high carbonation. Amazingly complex considering the ‘low’ ABV! Would make for an amazing session beer!

This Trappist brew is a subtle middle-intensity malty ale, with caramel and fruity brown sugar malty notes, along with some yeasty sweetness. The appearance for me was a weak point, my bottle poured a hazy ember red hue with a minimal fizzy head, nice color but nothing exceptional. On the other hand, I loved the nutty and barley-caramel malt aroma, reminiscent of a baked apple pie. Taste is pleasantly fruity and sweet, Belgian yeast notes are present but understated. Enjoyable overall, but not my preferred abbey ale.

Bottle into wine glass. Burnt orange, bit of a mongering gem head. Nose is fruity, baked Apple, apricot, grape and yeast. Taste I’d similar,a rich malty red with just a touch of sweet. Mild hops in mid and back keep it refreshing and from being sticky. One of my first Belgians many years ago along with the blue, and still one of my favorites

New (and expensive) oak aged version of Chimay Grande Réserve, from ’new’ oak casks according to the label. Thick, creamy, pale yellowish beige, lacing head over a misty deep brownish bronze coloured beer, looking the same as the original. Lovely and rich quad aroma of fig, peach, banana bread, red cabbage with brown sugar, oaky vanilla-like tannins, some wet wood, caramel, candied cherry, ruby port, honey, bayleaf, beef stock, jasmine, amaretto. Soft sweetish fruity onset of candied cherry, raisin, fig and banana with a subtle blackberry sourishness, softish carbo, full, mellow and ’fluffy’ body of sweetish caramelly and honeyish malts, thick and smooth with a slight nutty edge, evolving into a complex, satisfying finish of ongoing creamy malt sweetness and dito candi sugar sweetness, drying wood effects with retronasal vanilla tannins, light spicy hops for bittering balance and warming, whisky-like alcohol all the way at the back. Chimay Grande Réserve is rich and flavourful enough as it is, especially at a certain age, but in this case, the wooden barrels have effectively made it better: contrary to e.g. Sint-Bernardus Oak Aged, there is no added liquor flavour here, just the tannin-rich oak adding a subtle drought and an extra layer of aroma and taste. There is no doubt that this, like its regular version, can age beautifully if properly cellared for a few years. Overwhelming, rounded, opulent: this is everything one can expect from a trappist quadrupel. Makes me dream of similar experiments coming from the Rochefort or even Westvleteren abbeys...

The beer has a beautiful look. The color of the beer is a beautiful golden yellow, with a little hint of orange. The beer is quite clear, but it has a tiny cloudiness in it.The beer pours a tremendous thick layer of soft white foam. The bulk of the foam collapses quickly, but a nice rich layer of soft white creamy foam remains to cover the beer. The beer has a delicious smell. The smell is very rich and somehow thick. The smell has a strong nutty alcohol aroma. Besides this i smell some delicious hops, and a doughy yeast aroma. The smell is a delicious balance between sweet and bitter. Unfortunately I have a runny nose, so all the aromas are a little mild to me. The smell is delicious as well. It is almost the same as the smell. It is very alcohol, in a good way, has a little fresh hop flavor and has a delicious somehow doughy yeast flavor. This beer is more yeasty than most beers. The yeast in combination with the alcohol is amazing. It is a truly delicious beer. Just like you can aspect from a Belgian Trappist beer.

Dark amber/brown with thick off-white head. Lots of stuff going on in the aroma. I mostly sense cookies, banana and yeast though. The taste is firstly sweet followed by a bitter sharpness that seems delivered by the carbonation. Great full bodied and full flavored beer. A bit too carbonated for what best suits a full bodied beer in my opinion.

Tenval
Chimay Triple / Blanche (White) / Cinq Cents 3.5
A strong yeasty side, smells and tastes like yeast strongly, it’s amazing. Nice bitterness balance, kind of a sweet bitterness. Pretty nice appearance, especially the lightness of this beer and its foam. Great on the palate, powerful taste and long lasting. I’m not really into trappist beers but this is the type of beer that I consider as the most close to what a beer is supposed to be. Aromas are pretty average to me, but flavours are deep and powerful. I find it similar to Orval but the bitterness is so much more enjoyable (Orval is the only trappist I disliked ’till now). and damn this beer is cheap, there are plenty of more expensive beers that aren’t real beers. I’m used to bake so I usually taste fresh yeast, this beer is the beer that comes the closest to fresh yeast in taste.

11.2 ounce bottle poured into a brandy snifter. The beer is a fairly clear gold color with a white head of foam. The aroma has yeasty, estery characteristics to it that lean toward the banana and pineapple notes. The taste is moderately sweet and estery. Medium body and higher to medium carbonation. Pretty good.
