Taste is sweet, honey, flowery, spiced, dried fruits, caramel, molasses, booze. Syrupy mouthfeel, medium bodied, low carbonation, lingering sweet honey finish. Nicely sippable, very sweet. Aroma of honey, flowers, boozy raisins, dart, caramel, butterscotch, biscuit. Medium sweetness, slightly tart. Medium body, a little sticky, low carbonation. Delicious aroma, kept getting better. fiulijn	3.8 Miellerie des Clauses Hydromel Doux Golden to amber color, the most fair of the three from the meadery; dense pour. The aroma is nice, with honey, but not as articulated as the Sec and Fruité are; there is also some alcohol, rubber and dust aroma; very light oranges. Very sweet, even if not syrupy, actualy the body is less thick than the Fruité; sweet honey flavor, with probably a dash of complexity from the oak ageing, that here seems to be less evident than for the other two. The balance in this Mead is given both by a light acidity and by the alcohol; the light alcohol warmth in the end is actually very nice. Extremely pleasant, extremely well made, but not as complex as the other two. Tuesday, December 28, 2010
fiulijn	4 Miellerie des Clauses Hydromel Fruité Amber color, the darkest of the three; dense pour. The aroma is intense, sweet, just light honey; there is a strong presence of mellow fruits and orange flowers; dates, figs, marzipan. Thick mouthfeel but not syrupy; very sweet flavor in the front; good honey flavor, mild honey (like acacia) but also with a correction given by the ageing in oak barrels. The final is a bit drier, with a mild fruity touch, and just some alcohol warmth. Very original flavors, for a straight (unflavored) Mead. Tuesday, December 28, 2010
fiulijn	3.8 Miellerie des Clauses Hydromel Sec Amber color, just a shade darker than the Doux; dense pour. It has a very intense aroma of honey, light Madeira and alcohol, very light dust, some wood too. Thick body; despite the name, it’s only apparently dry, there is still quite some sugar left; flavor of dark honey mix (forest honey), probably due to the ageing in oak casks, that gives also some complexity to this Mead. The final is a bit too strong, warming, also woody/astringent and dusty. Interesting half-Sherry Mead. Tuesday, December 28, 2010

Solid body, rather sophisticated caramel and nut accents with a good but not overly sweet honey note. Almond and marzipan too actually. Warming alcohol in the finish. Ungstrup	3.3 Miellerie des Clauses Hydromel Sec Bottled. A slightly hazy amber mead. The aroma has notes of spices, honey, and some flowers. The flavor is very sweet with notes of wood, wax, honey, spices, and a bit of mold, leading to a dry finish where both the note of wood and honey carries thru.
