Natural Selection Theory Cider
Bottle. Pours a light straw/. No head to speak of. Quite a lot of sediment near the end of the bottle. Quite lifeless looking in the glass. Nose is somewhat volatile. A little fruit sweetness, plenty of acetone and some acidity. Flavours initially show the sweetness with a retrainied acidity on the tfinish. A little thin and a little one dimensional but interesting all the same.

Natural Selection Theory Cider
I’d normally avoid cider made by winemakers (or brewers for that matter) like the plague, but I’m happy to make an exception for these guys. Close to flat, hazy, scrumpy-style. Excellent retention of fruit character despite a long time on lees, with that distinct flattish softness you get from pears. Very unusual acid profile - quite volatile and a bit acetic but only appears about 3/4 the way through and disappears quickly. Low tannin, and the fruit’s not as concentrated as some of the best. Not as out-there as Thorogoods’ stuff, but not too far off. It’s a lot like Kellybrook Scrumpy actually, but in a shelf-stable package which is probably an achievement in itself.
