't Paenhuys Lune Mystère
Bock by Paenhuys created for the birth of the second daughter of the brewer in April 2022; bottle from Fontana in Sint-Niklaas. Very moussy, yellowish pale beige, stable head on a cloudy caramel brown beer with beige-ish edges. Aroma of hard caramel, overheated cinnamon, cooked pear, brown bread dough, nutmeg, beetroot, hint of milk gone sour (lactose apparently having been added for some reason), wet leather, dark green tree leaves. Sweet, fruity onset, ripe pear, medlar and some cherry, medium carbonated with an underlying, dim but lingering sourish element and powdery mouthfeel - possibly the onset of an infection? Dry-caramelly maltiness with brown-bready and vaguely nutty edges, spicy cinnamon indeed but eventually becoming a tad astringent (apart from being totally irrelevant in any Bock) and reinforcing that lightly astringent, sourish undertone; ends earthy, with yeasty 'dirtiness' and earthy hops joining that caramelly base. The added cinnamon is out of place here: I deem it responsible for that infection-like earthiness, powderiness and sourishness running through this beer, and I think a clean Dutch style 'herfstbok' without any spicy or other additions would have been a better choice. This also goes - perhaps to an even stronger extent - for the lactose that was apparently also thrown in. That said: I have not been at this brewery, which was among the closest ones to my former place of residence, since I have been living in Ghent, but I keep good memories of it and I would like to seize this opportunity to full-heartedly congratulate Dave with the birth of Lune!

't Paenhuys Lune Mystère
Doppelbock de 6,3 % abv et 15 ebu. Visuel ambré roux, aux reflets noisette. Entame douce sur caramel et toffee, avec pointe boisée. Longueur avec une très belle ampleur, et de fines nuances. CONCLUSION : essai réussi et transformé pour la "petite lune". Pourtant un petit % abv de plus lui aurait fait du bien ... Peut-être pour le premier anniversaire de "petite lune" ! (music pairing : Kosmic sun, album Medium interstellar .. nous en déduirons donc que la lune est moyennement interstellaire .. ce qui ne nous avance pas beaucoup .. dans l'univers)

Bazelsen Bruynen
Brune de 9 % abv, qui était produite auparavant chez Boelens. Visuel très agréable, marron sombre à la belle mousse beige foncé. Entame aux notes grillées et caramélisées. Longueur qui ajoute un rien de café et baies de genièvre. CONCLUSION : belle bruynen qui a déjà vécu quelques années (music pairing : Peyote brujo, album Sancti belial .. des espagnols de 2023 dignes des seventies .. quel plaisir oh Saint Belial .. )

I Draught /I Medium yellow cream head over opaque red-brown beer. Vinous, woody, smelling sweetish, with hints of thyme and oregano, undergrowth. Sweet, bit woody, sweet red dessertwine, hints of coffeecream. Feels just a little bit less bodied than a classical Doppelbock, but is chewy enough, slick. Medium carbonation. Convincing Bock, not oversweet.

Triple élaborée sur le modèle de la Schapenkop, avec un travail légèrement différent pour dire que l'on fait original … Exemplaire vieilli, ce qui aurait pu l'aider ... Et comme c'est pour la cause de la "voiture du peuple" (VW), on peut supposer que ce sera abordable au commun des mortels .. On navigue sur un terrain un peu acide, mais la longueur s'en sort .. heureusement ! CONCLUSION : voyagez en VW, si vous en avez envie (et il faut vachement en avoir envie ..), mais ne faites pas de triple .. (music pairing : Battle beast, album Circus of doom de 2022 .. qui sauve la mise .. on est heureux avec le rock du peuple ..)

Bottle, I forget from where. No readable MHD. Super dark brown, not black, hazy raisin color with small, fast dispersing head. Looks more like a Belgian strong dark. Almost no noticeable aroma, hint of malt, that's weird. Flavor is caramel slight-butterscotch sweetness, little depth, little complexity or aftertaste. A bit nutty like those sugar-roasted pecans at Christmas, but not as interesting. A bit disappointing for a nine percent supposedly-stout honestly.

't Paenhuys Monade
Newish Paenhuys beer, with a pink-tinged label depicting baby dragons apparently - a tribute to the birth of the brewer's first daughter. Intended as a light-hearted summer quencher apparently, but I am having this on a pre-winter night in late November. Thick and frothy, intricately cobweb-lacing, off-white, even-bubbled, moussy and diminishing and slowly opening but stable head over a hazed deep orange-glowing peach blonde beer, almost amber but not quite entirely so. Aroma of lilac blossoms, white soap, unsalted peanuts, old orange peel, bath foam, wormwood leaves, unripe pear, dry earth, turmeric, dust - but luckily no lemonade. Fruity onset, restrainedly sweetish, dried apricot, unripe pear, green banana, medium carb, slick and rather soapy mouthfeel; caramelly maltiness but thinly so, with a very slight toasty edge, but mostly remaining quite generically cereally. The soapy aspect remains, also when a soft floral hop bitterishness sets in (along with mild spicy phenols and an actual spiciness vaguely reminiscent of turmeric) - but alas, it remains too subtle to create a truly drying and quenching effect. A more confident hop bitterness and less of that soapiness would have enhanced drinkability and quenching properties in this summer beer, but as my esteemed colleague below observes, it is indeed a bit 'different' from the regular Belgian amber ale (or 'spéciale belge' because that is basically what this category is about) and technically solid. Not really my cup of tea though - Paenhuys's beers in general would benefit from a more generous hop dosage, if you ask me. That said: welcome to this world, Mona!

Medium, stable white head over fully hazy yellow-golden beer. Citrus, C-hops' galore, lime, lemon, ugli(peel). Resiny & citrussy bitterness, lemonsquash - just a little too watered down. Finish has citruspeel bitterishness. Extremely refreshing, if obviously very lean, watery. OK, alcohol is not the forte for this one, but imagining this on a sun-drenched terrace - ideal! 2020 edition. Bottle from a gift (thanks to Anke with thanks to Marie-Thérèse). Hazy dark brown, small, tan head. Aroma of red apple slices, black tea, liquorice, prune, toffee, candied orange peel, milk chocolate, burnt sugar. Taste has sweet red apple, pear & prune in a soft chocolatey & toffee-like malt body, bitter edge with spicy phenols & herbal liquorice, gently toasty. Herbal hoppy finish, lingering liquorice, dried fruit & warming gin-like alcohol. Medium body, slick texture, fizzy carbonation. Enjoyable but thoroughly Belgian.

Medium, cream-tan head, over deep black-brown beer. Dry nose, chalk, liquorice and a suspicious whiff of a halogen. Dry, liquorice, wood, bit pharmaceutical. Doubtfull hint at smoke, generally sweet. Medium bodied at least, very slick-oily, well-carbonated. Bof.
I 2021 Batch /I Good cream-ten head over reddish-shot black beer. Very roasted nose, almost ashy, but also sweet, as gravy from the meatroast. Drier in the mouth, roasted, but again with a quite sweet, almost syrupy finish. English sweets, hints of Schwarzwald Torte. Quite thick and chewy, but also syrupy. Medium carbonation. Quite OK, not stellar. 7/4/7/3.5/13

Small off-white head over (cold)hazed orangey-golden beer. Toasted, parsley, autumn leaves, slight acidity suggested. Quite bitter, autumn leaves, liquorice, bit sugar (Wayland?)syrup. Good balanced between toasted bitter and sugar. Bit fruity too, faint citrussy notes. Quite slick-viscous, good carbonation, medium bodied. Certainly better than average amber ale, quite likeable.

Thuis geproefd op 24 oktober 2020 van 33 cl fles (Hopduvel). Lichtjes wazig goudblond met goede romige witte stabielere kraag. Aroma: zoetje, granig-moutig, beetje fruitig. Medium body. Smaak: zoetje, granig-moutig, terug wat fruit, goede gemiddelde koolzuurprikkel, wat bloemig, tikje kruidigs, en vooral aangenaam prima hopbitterheid. Dit zou ik geen pils noemen maar een goed blond degustatiebiertje. Voor mij een positieve verrassing van 't Paenhuys.

't Paenhuys Bohemian IV
Artisanal pale lager by Paenhuys - their first - intended as a Bohemian Pilsener, but (rather weirdly) brewed with wheat, rice (!) and oats. Bottle from Fontana in Sint-Niklaas, in Paenhuys' home region. Eggshell-white, very thick and foamy, large- and even-bubbled head, (a bit too) enthusiastically forming on a lightly hazy, pale yellow golden beer with fierce strings of sparkling here and there. Aroma of dough, dried field flowers, cold cooked rice, white bread slices, baking soda, pumice, freshly cut grass, dandelion, gypsum, withered leek, damp kitchen cloth hint. Soft onset with very restrained fruity hints of green pear and unripe banana, fit for a lager, with crisp, minerally but not overly harsh carbonation; soft, even fluffy middle, pale malt sweetishness with a notably white-bready edge from the wheat and indeed a noticeable (and unnecessary) rice flavour and slickness, leading to a somewhat powdery, floral, gently but adequately bittering finish, exhibiting not just flowery hops and lingering bready yeast effects, but crisp, gypsum-like minerality as well. Remains altogether clean, with an almost Kellerbier-like profile, hadn't it been for the somewhat annoying soapy wheatiness and slick 'riciness' - why not all barley malt was used in trying to create a classic Pilsener, is completely beyond me. Still, this beer proves that Paenhuys is still trying to expand its limits, which I - originating from the region - can only welcome. I do maintain, however, that the rice, wheat and oats should have been left out completely, they do nothing to achieve classic Pilsener ambitions.

Pretty cloudy dark purple brown beer, small creamy beige head, pretty stable, non adhesive. Aroma: banana, caramel, yeasty, pleasant aroma. MF: ok carbon, medium body. Taste: soft roast, very bitter, malty, some banana, bit metallic. Aftertaste: very bitter, yeasty, fruity, sweet touch, more alcohol, some caramel, bitter finish.

28 April 2019. At Zythos Bierfestival. Cheers to Anke, 77ships & tderoeck! Hazy black, quickly thinning, tan head. Aroma of licorice, prune, raisin, milk chocolate, burnt caramel, toast, salted peanut, molasses, gravy. Taste is medium malty sweet, notes of caramel, molasses & licorice, fruity touches of raisin & ripe plum, roasted bitter hints of fondant & mocha, slightly nutty & toasty too with the faintest umami edge. Dryish, herbal hoppy finish, lingering licorice, mocha & chocolate, warming coffee liqueur-like alcohol. Medium body, slick-oily texture, fizzy carbonation. Hard to compare to the regular Zwarte Zjef, I feel like this needed a firmer bitterness to qualify as ‘Deluxe’. Good though.

Strong dark belgian de 9 % abv pour 21° plato. Mon exemplaire était largement après sa date limite. Couleur marron très foncé aux reflets bordeaux, et clarté nette. Bulles partout, bien vives (léger gushing à l'ouverture). Mousse beige, bien soyeuse, stable à 4 mm. Arômes de baies sauvages, airelles, malt cara, pointe de cerise. 1ère bouche à l'ensemble curieux fruits rouges/tabac/cendres. Arrière-bouche avec un fort résidu de cendres. 2ème à la belle texture, mais pas vraiment d'harmonie … Arrière-bouche hétéroclite, avec un peu plus de choses correctes. La longueur trouve péniblement un semblant d'accord entre les saveurs. Jambes à gros flocons, courtes, collantes. Levure souple, correcte. Alcool fort, mais qui peine un maximum pour harmoniser l'ensemble. Finale qui ne prend aucun envol. CONCLUSION : une winter ale oui, mais il ne faut pas trop compter sur elle pour donner la vraie notion riche et harmonieuse de la vraie winter ale. Belle texture veloutée pour se consoler .. due à l'âge de mon exemplaire. Mais comme les versions semblent être différentes chaque année, on ne peut tirer aucune conclusion de ceci .. 't Paenhuys Zwarte Zjef
Imperial stout de 9 % abv, qui semble changer chaque année … Un grand foutoir donc, et comme mon exemplaire n'avait pas de date cochée, bonjour les dégâts .. Il devait être en limite de validité, donc de l'année 2016, si Einstein est d'accord avec moi .. (ou bien Zjef …). Couleur marron aux reflets auburn, et opacité assez faible. Mousse brun clair, en nappage de surface. Arômes de fruits mûrs, pointe de praliné, bruyère en fleurs. 1ère bouche souple, avec un côté vineux et épicé, assez mal assemblés. Arrière-bouche qui donne des notes amusantes mais peu harmonieuses. 2ème qui trouve un peu de café inclus dans une sorte de vin chaud .. Arrière-bouche avec fruits mûrs et vin capiteux. La longueur ne donne guère plus d'harmonie, mais des notes chaudes quand même .. on y trouve un peu de girofle, armagnac, fenugrec .. Jambes légèrement huileuses, assez courtes. Levure originale, belle ligne. Alcool bien mais très naïf .. comme un écolier d'école primaire, il compte sur ses doigts !! mais le total n'arrive pas à 9 … Finale qui laisse le stout impérial au niveau d'une double de quartier. CONCLUSION : une bière d'hiver assurément, et comme il fait des températures d'hiver à la mi-avril (dues au " réchauffement " climatique ..), on est content pour cette soirée où il fait bon réchauffer les doigts de pied !! Les gosiers sont moins heureux quand même … Quant à l'imperial stout, il n'y en a point, ne cherchez pas … (6/2/4/3/11)

Couck Blond
The second commercialized Coucke beer, after a witbier; made by a hobby brewer who lives in an old mansion in the village of Sint-Gillis-Waas, where once a local brewery was accomodated. Like the first one, this regular blonde is brewed commercially at Paenhuys in nearby Nieuwkerken-Waas. Bottle from Fontana. Thickly and continuously membrane-lacing, egg-white, creamy, dense, regular and closed, very stable head over an immediately hazy deep ochre-hued straw-golden beer, deeper apricot blonde and equally misty with sediment. Aroma of ripe banana, chewing gum, strong soapy coriander seed, baking soda, white bread dough, camomile tea, half-ripe pear, pumice, cloves, old ginger powder, dried and 'faded' orange peel, powder sugar, soaking wet white paper. Fruity, crisp onset, sweetish with a ton of banana ester (isoamylacetate) with very bubblegummy effect, notes of green apple, pear and unripe nectarine, strong and rather harsh, stinging (over)carbonation with souring and very minerally effect; rounded, soapy mouthfeel impaired by this extreme carbonation. Soggy white bread basis with lingering honeyish white candi syrup sweetness and banana ester, soaked in a very strong dosage of soapy and spicy coriander seed, seizing power over the finish, where a grassy hop bitterish accent appears alongside soggy pale malt sweetishness, outspoken phenolic spiciness and strongly lingering banana ester. No true off-flavours here, but all the clichés typifying your standard Belgian blonde are there: an overdose of coriander and banana ester, hugely overcarbonated and sadly uninspired. As cliché as it gets, but admittedly there is even worse in this particular, still highly overexposed Belgian segment. I can, however, see a beer like this gaining local success commercially speaking, as it certainly ticks all the boxes when it comes to the simplicity and 'easiness' the average Belgian beer drinker expects.

33cl Va'Snee bottled 10/2017, merci I&D. - - Dullish honeyorange butterbroth. Sweet aroma of Fanta in skimmed milk banana milkshake, shot of apricot liqueur. Sugar-pumped body of grains given artificial levity into the realm of destilling - not something I've ever needed. A modern heightened bitterness builds and joins a strachy bitterness of the not-neutral yeast.

Bottle from Willems. Ridiculous amount of gushing releasing inviting, tropical fruity, resinous hops and a lot of residual yeast resulting in a sewage coloured beer with a huge off white head. Tastes very nice though: tasty resinous hops, decent bitterness, slightly caramelly malts underneath, bready. Decent taste and complexity but the gushing really spoiled it.

Dubbel with hazelnuts by Paenhuys, one of their new, more experimental beers; apparently the addition of the nuts has brought an infection to the beer so they quite cleverly sold this as an 'oud bruin' at Modeste... Pale yellowish 'ecru', stable, moussy, shred-lacing head over hazy burgundy-hued chestnut brown robe. Unusual aroma: grape jam, passionfruit, orange candy, sourdough, soggy brown bread, pear, hazelnut 'petits fours', damp tree leaves, raw red cabbage. Sweet ripe blue plums, maracuja, pear and sourish brambleberry in the onset, fizzy carb, supple bready maltiness with nutty flavours indeed clearly present; dim sourishness persisting, leading to a background 'dirtiness' and earthiness in the end, with ongoing grapey and passionfruity effects and low in hoppiness. Very idiosyncratic to say the least, apparently obliviousness to international beer style tendencies still leads to these very individual, if not downright weird beers in largely inward-looking Belgium and this is a good example; for me and for my companion beer taster, however, the flavours did fall well together, but I can imagine this beer dividing opinions. Surprising, really, perhaps Paenhuys' most interesting creation to date, but I wonder how they'll manage to repeat this subtle infection effect if they want to produce it a second time - should that be the intention...

New Paenhuys experiment - they're trying to experiment quite a lot lately - but actually simply a dry-hopped version of Zwarte Zjef, their deliberately 'compromized' stout which consequently isn't a stout. Anyway: draught only, with no intentions for bottling so far, tasted at Modeste. Thick and creamy, lacing, pale greyish beige head, dark and misty brownish burgundy robe with red wine hue. Aroma of melting caramel, fudge, treacle, pear syrup, herbes de Provence, old dried grapefruit peel, cherry tree resin, bread pulp, dried field flowers. Sweet, soft, rounded onset, ripe and dried plums, pear, fig, soft carb, creamy and fluffy mouthfeel, toffeeish and brown-bready malt body, floral and mildly spicy hop bitterness in the end but subtle, with caramelly malt sweetness dominating and highlighted by a dash of warming, gin-like alcohol in the end. In itself a perfectly enjoyable beer as far as I'm concerned, but Paenhuys, now that a younger generation is gradually taking over, should seize that opportunity to make a thorough study of non-Belgian beer styles: this is as much a black IPA - or IPA in any sense of the word - as Westmalle Dubbel is. Clearly dry-hopping a stout - which in this case is not even a real stout - is a cheap shortcut and cannot create a true black IPA...

Thank you! Sampled bottled @ Modeste 2018. Dark red amber, little head. Nose is dull empty, metallic, rotting fruit,..; Dull, thin, basic rotting, fruit, basic gum, zero sourness oddly,… Thin, dull, no sour? Poor.

Bottle @ home. Unclear yellow color, virtually no head. Smell and taste malts, a bit floral, a slight distant hint of orangepeel, quite sweet. Overall quite decent though. Finished the bottle with ease and would drink this again.

1/VIII/18 - 33cl bottle from De Hopduvel (Gent), shared @ my parent's place - BB: see cap, nothing on the cap though... (2018-941)

Clear gold yellow beer, big irregular fizzy white head, little stable, falls down quickly. Aroma: soapy, lots of coriander, some citrus, bit floral. MF: ok carbon, medium to light body. Taste: pretty sourish start, wheat, floral, citrus, soapy bitterness. Aftertaste: bit acidic, soapy, coriander, citrus, some orange peel, pretty dry finish, bit fruity still.

Flaska från belgiuminabox. Drygt två år gammal. Mahognyfärdag med en krämig skumpuck ovanpå. Potent med värmande alkohol, torkad frukt, sött mörkt bröd, lite anis, choklad och honung. Men också en jästton som är lite kärv och lite mycket alkohol som slår igenom. Ok+

A dark yellow beer, a head is small and blond. Aroma has fruitness, perry, some earthyness and sourness. Taste has furitness, hint of earthyness. Medium bodied, almost without carbonation. Heavy and joyless.

't Paenhuys Witte Mie
Bottle. Pale gold, ring of long lasting white head. Cakey, doughy yeast aroma, wheat. High co2. Nice strong wheat bread throughout, mineral water taste. Not really much in the way of spices that you usually get with a Belgian witte, but it's enjoyable. Crackers and bread flavor remains. Not extraordinary, but I liked it.

Cloudy bright pink beer, creamy pinkish head, unstable, non adhesive. Aroma: very fruity, lots of raspberries, not sguary, bit yeasty, decent. MF: lively carbon, medium to light body. Taste: very watery, somewhat sourish, witbier, little fruity, acidic. Aftertaste: bit sour, watery, soft bitterness.
