Hot cross bun aroma, sweet and bunny, orange peel, cinnamon and clove, and I even imagine raisins here. Quite a light palate, no heaviness or stickiness at all, it seems like a British 5.X% real ale winter porter - even has the softness of the carbonation too. Taste is also bunny, but also beery - there's a proper roast to it. Spices are obviously clear, but they aren't stupid, I am actually going to approve the use of the word "subtle", because compared to some of the nonsense out there this has barely more than a hint. If I close my eyes, I wonder if I can imagine being at the Cambridge Festival of Winter Ales. Yes, I can. That's impressive. Downstairs back bar, yeah.... Great winter porter, even if the concept is simple, like the British beers that I love. And if this is bottom fermented, this is another proof that snobbery over such differences is misplaced, that yeast makes a good beer in the right hands. (6:3:6:3:13=3.1) Woh, that's a hoppy aroma, right from opening the can the sweet citrussy aroma hops literally fly out of the can. Sweet pale malts accompany that in the glass, a fairly clean NEIPA aroma. Pale and cloudyish. Light palate, carbonation a bit prickly. Clean NEIPA taste, pale malts, some zesty orange, but also some washing detergent. Pleasant bitter bite, but perhaps a bit soapy, quite assertive and tingly, but no hop acid burn. 2.9 Apynys / In Peccatum Brut IPA 375ml bottle (Vingiu webshop, Tallinn) (6:4:5:2:12=2.9) Clear golden orange, large frothy head, sediment settled nicely so that it was easy to pour almost all of it. Lovely fruity esters as I pour, almost grapey but not quite winey. In the glass more of the grains come over. Light palate, crisp carbonation, quite spritzy. Slightly schizo taste, pale malts, some unripe fleshy fruits, really biting noble hop bitterness, but some dirty earthiness too. Biting tingle and earthiness persist, dominating the finish. Swirling improves it massively, taking the acidity off the tongue and letting the malts come out more. I still don't get bruts in general, and the bitterness here is mis-aimed considering the grain bill - you could stick this hop regime in a stout, for instance - so this doesn't convert me.
