On tap at Fermentoren Aarhus. Pours a light golden with a big white head. Aroma has lots of spices like coriander seeds, bay leaves, cinnamon and a slight acidity. Taste is surprisingly sour and again with lots of dry spices. Average carbonation and a medium oily body.

750ml bottle I picked up while in Trieste, shared with the DC Crew, pours a transparent copper amber with no head and heavy legs. Nose has candlewax, caramel, mild nuts, some cane sugar, some cotton candy. Flavor is sweet with caramel and chewy nougat, booze, some fruit roll up, fruit cake, dates, some apricot, candied peach. Finishes sweet, boozy and oily but also very drinkable.

Lattina. Il gusto al naso viene indirizzato al luppolo. L’intensità olfattiva è elevata e la persistenza olfattiva è apprezzabile. Il cappello di schiuma a bollicine medie resiste poco. L’aspetto del liquido è limpido. Le bollicine sono fini. La carbonazione è persistente ed insistita. Il colore è giallo dorato carico. Il corpo è pieno. L’amaro è deciso. L’intensità gustativa è elevata e la persistenza gustativa è buona. Il gusto è piacevole. Le sensazioni boccali finali sono luppolate. Il finale è amarognolo e lungo. Il retrogusto è intenso. In bocca l’aroma riporta sentori di miele, agrumi e resina.

A 0.5 l bottle that poured a hazy amber body with no head and only a little bit of carbonation. Aroma of malted barley, grain, sweet fruits, wood, also grape skin. Flavor was fruity, white grape skin now dominated, oak, sugar, caramel to cooked fruit, earthy notes. Maybe touch of vanilla, too. Medium bodied, even with a watery mouthfeel since these grapes balanced out the sweetness of a barley wine and made it extremely easy and drinkable on palate. Moderately long finish, balanced, too, with light vinous sourness being the longest survivor. Interesting and memorable, although really a weird brew. I guess many would simply hate it, but I’m fine with it.

Tap@Taphouse. Pours almost clear amber with small head. Aroma is sweet malty, slightly fruity with ripe fruits and has some honey and caramel. Taste is sweet and malty with biscuit, caramel, overripe fruits and some honey. Hops is almost absent but finish is sweet, alcoholic but semi-dry. For the type the alcohol should have been better hidden.

Jun. ’16. A 0.75 l bottle. It poured a hazy deeper orange body with medium sized head. Orange fruit aroma, ginger, some light roasted wheat-like to grainy malt, yeast. Flavor was lightly sweet, roasted bread, caramel, sugar but also lightly bitter from the roasted malt, too. Lightly spicy towards the end and in the very aftertaste, I guess declared Mediterranean spices - rosemary? Medium in body with quite high carbonation which emphasized the yeasty chalk notes, too. Long, sweet and a bit alcoholic finish. Belgian style feeling. With its interesting notes still it wasn’t that unusual as some brewery’s attempt on widespread styles that they do in peculiar, brilliant way.

2008 bottle. My god this is something special. Has aged wonderfully. Lightly smokey with complex malts and a light smoldering tea leaf finish. Lots of layers and extremely smooth on the palate. Class in a bottle.

Dull light brown, no head. The aroma has a fair bit of chocolately, espresso character, with maybe a light brown sugar. There is light sugars, some tree fruits, and finishing in a bit of wood. There’s a fairly sherryish oxidiation in the finish, with a touch of alcohol lending a little bit of drynes.

500mL bottle, pours a filthy dark orange with a small bubbly beige head. Aroma has some oxidation, with red wine barrels, light caramel and toasted bready notes. Flavour has pleasant sherry-like oxidation, caramel, vanilla and subtle red wine. Finishes with vanilla, subtle sherry and caramel. Complex, warming, and beautifully constructed. Fantastic.

500mL bottle, pours a dirty orange with a tiny head. Aroma brings out notes of caramel, a little marshmallow, light vinous notes and vanilla. Flavour is complex, with loads of vanilla upfront, marshmallow, feint white wine, and caramel. Wonderfully integrated, warming and not boozy at all. Rather thin on the palate, with a beautifully vanilla-y and lightly tart finish. Excellent.

Amber with some haze...no head. Doesn’t look great. The aroma doesn’t bring a lot, but on the palate it’s amazing. Very distinctive. Honey, vanilla, golden raisins...all those pale sweet notes. Late harvest wine. Light barrel. The malts have been completely transformed. Some alcohol heat at the back of the throat, but you don’t really taste it on the palate.

330ml bottle. Minimally cloudy, yellow-ish golden colour with average to huge, foamy, fairly lasting, moderately lacing, white head. Fruity and minimally floral-spicy aroma, notes of yellow apple, apple purée, hints of oat flakes, bergamot, rose hip, a touch of coriander. Taste is minimally sweet oaty, fruity notes of yellow apple, apple purée, mild, dry overtones of bergamot; slightly curbed lively carbonation. Mild, well balanced, unobtrusive but pithy.

Jun ’16. A 0.75 l bottle, corked&waxed, as Baladin Leön. Obviously a palindrome of Nöel, clever. It poured hazy dark rusty brown body with quite a big and creamy head that dampened the aroma initially. It showed dark dried fruits, some spices, weaker anyway. Flavor was lightly sweet, dark dried fruits, strong chocolate note, caramel, grainy, bread, pepper (brewer’s signature I guess) wood, some perfumey spice. Pretty complex with notable alcohol that didn’t bother though, I understood it as a part of its Christmas character. Full bodied with long, lightly bitter (both grainy and alcohol bite) and sweet dried fruit finish. Quite nice Noël.

Jun ’16. A 0.75 l bottle. It poured hazy golden-amber body with medium sized head. Lightly hoppy fruity aroma, some fruity peach and floral. Flavor, similarly, a bit sweet, fruity, especially peach, flowers, apricot, vanilla, banana, bubblegum, pepper spicy. Pretty high carbonation. Medium to full body with moderately long finish, fruity and pleasant. Tiny herbal bitterness here. A fine beer, but the brewery got me used to something twisted and peculiar, while this is just "ordinary". Also, got more Belgian feel than American, lacked bitterness. But quite enjoyable anyhow.

Jun ’16. A 0.75 l bottle. It poured hazy orange body with bigger, but short living head. Coriander, orange, generally fruity (apricot, peach and that stuff), sweet candy, lightly yeasty and chalky wheat aroma. Extremely nice and intense. Flavor was lightly sweet, pleasant, very fruity, too, but less intense than aroma would suggest. Peach, orange, citrus, light honey, sugar, cloves, coriander, lactic-chalk. Full body for the style with long, sweetish candy, chalky and fruity finish. Hard to believe the low ABV. Medium complexity, but very effective and tasty Belgian wit, the best I’ve ever had! And completely in style, so I really don’t get some low ratings here.

Jun ’16. A 0.75 l bottle. It poured hazy orange body with big, but short living head. Floating particles inside. Weak aroma, honey, apple, maybe hazelnut, with bread, lightly lager-ish touch and roasted bread malts. Flavor, on the other hand, was much stronger, lightly sweet and gets more sweeter later on. Honey, light spicy, especially black pepper and lightly yeasty. Grainy malt was overwhelmed by the honey but still present a little bit. Alcohol was extremely well hidden in its full body. Long, cloying honey and sugary finish. A fine honey ale, gotta love Baladin, although not that complex as some of their other beers.

Jun ’16. A 0.75 l corked/waxed bottle. It poured a bit hazy yellow body with medium to big head. Quite weird, but fine aroma. Apple, peach, coriander, elderflower, regular mineral water, hint of something similar to a cheap citrus radler, but blended quite nicely here with all the components. Flavor was lightly bitter, also, as it got warmer very peppery (most realistic black pepper I’ve ever encountered in a beer) leaving the long hot aftertaste. Every new sip helped it to go away for the new lighter flavors to show up. Light malty sweetness was biscuity, chalky, floral with a hint of cucumbers, coriander, other spices, sunflower seeds. That said, it’s obvious couple of sips can’t be enough to really understand this one in its full complexity. And it’s so weird. Thinner in body, believe it or not after all, smooth (oats I guess), mineral water in the finish as well, besides aforementioned pepper. Wow, this was probably one of the most twisted beers ever, but I enjoyed every bit of it. Extreme complexity for the little ABV, luckily, not another "praised" bland saison. I’m in love with this brewery!

Baladin Xyauyu Kentucky
Jun ’16. A 0.5 l bottle, vintage 2011. The plan for four people a week ago was to kill four bottles of various Xyauyu, but the basic one - Oro was enough to call the night. I mean, tasting at least, so this was take two, with another one, the most elusive and the most expensive.
Kentucky poured clear and still deep copper-brownish body into my snifter. Very intense sweet aroma, caramel, dark fruits, raisins, figs, quite similar to its base - "Oro" with maybe a bit more wood hints. Simply - aged brandy. Flavor was lightly sweet, and I mean light, really not too cloying as "Oro". Cooked fruit, caramel, dark ripe fruit, dried fruit and pleasant light fresh tobacco leaves notes. Almost like I’ve chew them. Full bodied of course, still cloying with long, sweetish, fruity and only lightly alcoholic finish. Tobacco added to acidity in the aftertaste and sharpened palate, although balanced out the sweetness, too. I like it better than Oro, it was more elegant and much easier-going (although still, a very slow brew, no wonder the brewmaster call it a couch beer). Pairs well with your favorite non flavored cigar, less with a cigarette. Very nice.

0.75l bottle shared with The Tasting Crew. A slow, but still fast enough gusher. Got it over the glass quickly enough to avoid and bad vibes around the table. Looks decent at first with a big off-white head but it doesn’t really last for long. Quickly fizzing away in to nothing really. The beer itself is mild mild blurry and orange-golden in color. Smells like honey. Honey and popcorn? Mild spiced also with traces of coriander and something I cannot find a name on. A spice. Allspice? Not sure. Quite high, too actually on the carbonation, lively almost and it’s light oily in the mouth. Not a 9 percent abv on the mouthfeel at all. Honey, sweet raspberry juice and it’s just sugary sweet all the way this. More coriander before it ends with almond essence. Nah, this was not for me. 14.01.2015

Brun øl med rødt skær. Uklar og med lille, gult, forsvindende skum. Duft af brød, gær og krydderier. Smag af brød og udefinerbare krydderier. Brunkager. Relativt bitter og med krydret humle. Medium tykkelse og tyngde. En udmærket øl, men havde desværre forventet mere fra Baladin, så jeg blev lidt skuffet.

May ’16. A 0.75 l bottle. It poured hazy golden to amber body with a small head. Sweetish toasted malt aroma, caramel, peach, raisins. Only lightly hoppy like citrus. Flavor was still on the sweeter side, toasted, especially caramel, vanilla, yeast, typically Belgian. Spicy as well, there were some cloves and pepper, too, with light citrus hop presence rounding it nicely. Medium to full body with high carbonation and a long, tingling sweetish finish that also showed light bitterness towards the very end. Very nice beer, well in style with Belgian ales, better they didn’t hop it up too much, achieving an excellent balance this way.

May ’16. A 0.5 l bottle, 2012 vintage. It poured hazy, only lightly carbonated copper-brown body with no head. Very strong malty aroma of figs, sugar, brandy, caramel, cooked fruit, leather, alcohol...everything. Brandy-like. Flavor was sweet but not as much as aroma would indicate. Quite complex although a tad less than in nose, very fruity, both dried and cooked fruit, especially raisins, sugar, caramel, a bit of wood and leather. Alcohol of course. Full body, cloying, with a sticky mouthfeel. Very long, warming, but pleasant, although very sweet finish. Hard to elaborate anyway, but interesting and unique experience. As it got warmer and opened up completely, showed elegant orange peel bitterness, especially in the finish. Probably it would be even better, more complex after a couple of years. Extremely slowly going and cloying, would be hard for a normal person to finish this single bottle in an evening all alone.

Portrait: Une bière dorée foncée. Un nez d’épices de Noël, de patchouli, de girofle, d’écorces d’orange. Un corps mince pour transporter toutes ces épices. La bouche est comme le nez avec des épices, dont le gingembre. Loin d’être mauvais.
