3.5 Phoenix Arizona Cask at Tap n Barrell, Wigan. Pours gold with minimal off-white head and excellent lacing. The aroma has floral hops and grains. In the mouth iy was superficially sweet, but with some underlying sharpness and a creamy texture. The flavour is basically floral hops with some hints of barley sugar, spices and ginger. 3.2 Phoenix White Monk Cask at Borough Arms, Crewe. Pours golden amber with a small off-white head, good lacing and medium carbonation. Floral hops and grains to the fore in the aroma, plus some hints of malts. In the mouth it starts off sweet and creamy but with a little underlying bitterness. 4 Phoenix Porter Cask at Moon Under Water, Wigan. Pours almost black with a medim sized foamy tan head . There’s chocolate and roast malts in the aroma. In the mouth it is initially sweet, if a little watery,with flavours of chocolate, lactose, and malts.
