Quite a interesting brew, very complex things going on here. Poured a hazy dark amber with little head. Aroma was of basement, vinegar, vinous, and plums. Tastes of leather, smoke, plums, and grapes. The taste was a nice surprise, since I really didn’t detect the leather and smoke in the smell. Had a light dry body with low carbonation and some tartness near the end.

My first real Italian brew. I can see why they aren’t famous beer, not saying this was bad, just not my usual quaff. Poured hazy straw with the tiniest of heads. Aroma was of wheat, basement, vinegar, and grapes. Tastes of grapes, lemon, wheat and vinous. Has a very light body that is flat with light bitterness. Extremely dry beer. My tongue was never wet once.

One I would have really enjoyed to have fresh and on tap. Great smelling hazy copper, capped off with a light head. Sour plums, wheat, leather and sweet raisins enticed the nose. There was a surprising smokiness in the flavour as well as some white wine, caramel, cinnamon and light tartness. Low carbonation and a thin body here, this brew would have been rated higher had it had a little more chew and zazz.

This being my first foray into this style it is always hard to understand the overall "Beer-feel" that is attempting to be conveyed. Light hazy straw poured out leaving a thin white head. A bouquet of white grapes, piss, wheat and basement wafted forth from the glass. The somewhat watery, thin body tasted mildly of wheat and was lightly bitter with a vinous quality. The most remarkable thing was the actual finishing texture, very smooth and dry at the same time, I’ve not had anything like it!

In short: A yeasty messy blonde beer of some kind. A mess.
How: Tap at brewpub
The look: Cloudy yellow-blonde body topped by a medium white head
In long: Strange nose with a few strange undesired wild notes that I’d describe as a dirty wet cat. Taste is mostly very bland. Some basic cereals lots if in yeast soup. This is far from a clean beer. Notes of lemon pie. Light strange tartness. Honestly, with all that messy yeast I could not detect if this was a lager or an ale. Really. If the city architects had applied the same level of professionalism as this brewpub a woodpecker could destroy Florence.

Draught at Il Bovaro, Florence. Murky amber with medium tanned head. Syrupy caramel on the nose and not really anything else. The flavour is caramel syrup - tastes kinda like an alcoholic caramel milkshape. Bizarre. Syrupy mouthfeel. Boozy and ultra sweet cloying finish. Terrible beer.

Draught at Il Bovaro, Florence. Hazy lemon yellow with stable white head. Aroma and flavour of white bread, dusty spice and vanilla sweetness. Low bitterness. Some sugary sweetness shows through in the finish but otherwise an OK helles.

Not sure I agree with the style classification but otherwise, the other description’s are close. Dark brown color. An aroma of malt and fruit. Flavor has more fruit and sugar, and just a little sourness.

Axel wasn’t on tap when I was in Florence, but the brewmaster had this on tap in it’s place. He described it as a "brown stout". Pours a dark brown with a creamy tan head. Smells of earthy malts and looks delicious, but a little chalky with notes of tart fruit.

Pours a mahogony color from the tap with a creamy tan head. Smells of tea and maple, yet unexpectedly sour in flavor. Not tasty at all, as if the water was soapy when this was brewed. Notes of unripe peach and tart cherry. More ambitious than enjoyable, unfortunately.

My Bottom Line:
Caramel sweetness overrides the dry yeastiness and whatever hops may have been used in this amateurish sweet brew.

Further Personal Perceptions:
-A veil of foam tops the opaque cola-like reddish brown.
-The yeasty nose is quite dusty.
-Carbonation is prickly and clashes with the lumpy sweetness.
-Cherry fruitiness roams within.
-This is far from balanced, and I can’t even see a sweet-toothed beer lover having a hankering for it.
-The two beers I had from them point towards something fishy...Cheap ingredients? Improper brewing methods? Whatever it is, it makes Il Bovaro beers a lot less interesting than its Tuscan compatriots.

My Bottom Line:
This very yeasty blond lager offers direct cereal character throughout alongside discreet citrusy, herbal hops.

Further Personal Perceptions:
-A sheet of foam tops the cloudy blond.
-The aftertaste is lengthy and concentrates on base malt flavors.
-The yeastiness is overdone and feels out of place. At times, this tastes like a Weizen fermented without the proper yeast strain.
-This is one of those artisanal beers that would probably benefit from filtration.

Cloudy chestnut coloured. Thin white head. Quite soapy in the nose, fruity and slightly tart. Not the cleanest lines I suspect and it would not be very surprising from this brewpub. Fruity orientations take strawberry and blueberry inclinations. Limited complexity, feeling kinda synthetic and aromatised outside brewing. Besides, a waxiness overpowers the darker malt profile. Insufficient carbonation also enhances the sweetness while the body is thin and dead. Soapiness remains strong throughout and with the body’s frailty, the dish water association is quickly made.
