Iyo Kagiya Junmai Ginjo Nama Genshu Sake
Taster at Jam. This is the nama genshu version made with Matsuyama Mii rice. Nice, fruity, floral aroma, ginjoka, some cedar, sweet melon, caramel, apple. Sweet and spicy flavor, caramel apples, vanilla, very fruity. Full and smooth, lovely fruit with alcohol burn. Icy looking. Excellent.

Seiryo (Japanese Dragon) Ai San San Sake
Strawberry, coconut, light koji, and soil nose, fabulous complexity. Crystal clear, nearly colorless. Smooth medium body, slightly watery. Alcohol content not evident until it reaches and burns the belly. Weak flavor of honeydew initially, strawberry appears at midpalate. Has some surprising attributes.

Seiryo Miyosakae Ohako Sake
Bottle at cgarvieuk’s as part of my sake initiation! Totally clear pour. Nose is a bit unusual - some ethanol, something creamy, some sort of sweaty smell too. Not entirely unpleasant though. Zesty palate, bit aggressive, some more petrol stuff, some aniseed. Tad rough on the finish.

Seiryo Miyosakae Ohako Sake
Bottle. I am assuming that this is the correct sake based purely on Miyosakae. Pours very clearly, very faint petillant quality. Nose presents with rice, some fungal koji and more cereal rice. It’s very pure, some light ethanol and perfume lingers, but the rice dominates. The most pure rice essence I’ve gotten from a sake. On taste, has texture like parafin, thick with big persistent legs and clean. the rice and earthy notes from the koji really sing. It seems pretty delicate, but has power. I really enjoyed this.

Seiryo (Japanese Dragon) Ai San San Sake
I’m not even going to waste my time going into specifics on this sake. No, it’s not futsuu-shu. But it’s not good either. I’ve had $10 magnums of sake that are better quality than this. If you’re looking for a buzz, this may be up your alley. If you’re looking for nuance, look elsewhere.

Seiryo Miyosakae Ohako Sake
Bottle. The name means No 18. Pours transperant. Complex spicy and floral aroma. The spicy flavours leave some room for licorice and herbs as well as yeast, yet it remains restrained. The Sake Meter Value implies a very dry sake- the contrast is big to the Ai San San Junmai Sake from the same kura. Texture is almost grainy. The ultimate aperitif sake?

Seiryo (Japanese Dragon) Ai San San Sake
Bottle. Almost transperant, a faint yellow tone. Licorice aroma. Yeasty licorice flavours, smooth and full body. Sake Meter Value +3, hence medium dry. Highly enjoyable.

Seiryo (Japanese Dragon) Kijoshu (Dessert) Sake
Sakagura, NYC: Very sweet, but not so much as the remarkable Hanahato (Flowers and Birds) Sake. Moderate complexity, with an unusual not-for-everyone medicinal/herbal aftertaste. I loved it. $8 for a 2oz taster in NYC. Enjoyed again at Sakagura - very different, but I prefer Hanahato and think I overrated this the first time I had it. Not sweet enough for a kijoshu.

Seiryo (Japanese Dragon) Ai San San Sake
This Ai San San is simply wonderful. Imported from Japan in pink 300ml bottles by the Japan Sake Exporting Board, Seiryo's quality Junmai is medium-dry and demonstrates Aichi Prefecture craftsmanship at its best. Cascading floral aromas, followed by a butterscotch, rich mouthfeel rise up to greet you. The alcohol is almost undetectable, which makes drinking this colorless drink a joy, though you can smell the alcohol a bit. Overall, very pleasant.
