Rock Bottom Chicago Sweet Tart
At the brewpub in December, 2015. appearance of a clear, dark copper color. Served in a pint glass. Light berry aroma and some yeast there also. flavor has the lightest hint of a sour flavor, but certainly not sour yet. Served too young maybe. As it is, a light flavored fruit beer with some yeast that leads me to believe it might change given some time.

Rock Bottom Chicago Cherry Fizz
Draft sample at FoBaB í15. Pours a clear amber color with a small off white head. The aroma and flavor had sweet malts, caramel, gin barrel character, mildly tart dark cherry, wood, another break between all the bigger dark beers, this one didnít completely work for me though.

Rock Bottom Chicago Tropical Kaleidoscope
Draft on tap at the brewpub (Chicago, IL). Pours a darker deeper Carmel used copper hue, haze body with some darkness. Later fall gentle glow, frothy whitish head atop is firm, a nice layer with solid retention. Full film, decent ringer and flow. Aromas are punchy and citric, tropical and a bit juicy. Pineapple, mango, some guava flow with some decent florals. A bit of earth, mellow malt bill is bready, subtle biscuity toast. Punchy floral and citrus rind bitterness supports that fruity melange on the nose. Lighter end of the fold in body with some solid carbonation, potent floral bitterness latches on the distract a bit more from the base. A bit toasty, that biscuity toast element you find in Daisy Cutter without getting sweep. Sweeping strong bitterness washes over the palate, lemony and floral with some grapefruit flourish. The tropical fruit weaves in and out but never takes the focus away from that potent bitterness and toasty yet unintrusive malt character. Some wafts of mango, subtle gumball, tropical essence but the Centennial drives the ship. Potent, bitter and fresh. Finish is dry, tapering citric lemon and grapefruit, pithy and rind oils. Bitter, toasty, floral and a touch soapy with those fruit complexities adding to its intrigue. Really nice stuff as the nose promises something a bit more fruity but ends up staunchly bitter, toasty and citric. Really nice stuff, would be nice to see it down into the high 5s ABVwise?

Draft at the taproom. Pour is clear copper with a fine white head that dissipates after a few minutes. Allspice, nutmeg and bread on the nose, though not overpowering. Taste matches the aroma but fades quickly into a slight resinous bitter. Light and highly carbonated on the palate. Rock Bottom Chicago Grand Cru
Sample Pour at GI Sunday Funday. A hazy deep reddish copper colored pour with a fast fading cream head; aroma of unrefined sugar; rich cane sugar taste with some raisins giving a firm body; and a pleasant grainy finish thatís slightly sour. A rounded and well-balanced beer that hides itís alcohol well, but leaves a pleasant warmth in the stomach.

Rock Bottom Chicago Big 14 Stout
Tap at the brewpub - pours a dark amber brown - a little thin and with a kind of harshness to the carbonation, so as far as the style goes, the texture is way off - the flavor is pretty nice - dry, roasty, mildly acidity, with a little of mineral character, tobacco - bitterness from the darker malts is a little rough on the back end - alright.

Golden and very lightly hazy with a continuing thin head. Very mild aroma with a hint of perfume and wild flowers on a grassy mountainside. My pint was served cask conditioned, which left it feeling a little flat and limp; probably wpild be beter with more carbonation. A bit more bitter than I would like. Not all that good. This was really good for about two ounces but it had too much sweetness. Big alcohol driving a lot of vanilla and bourbon, very clearly barrel aged for all of the 15 months that they claimed. Over the top in a good way until it wasnít. On tap at brewpub.

Tap at the brewery - really an APA, and a pretty clean and decent one - clean, crisp malt structure - medium dry and Biscuity - hops are a little subdued, but pleasantly grassy and citric - peppery finish - nice quaffer.

Tap at the brewery - clear gold - fairly crisp, with a strong mineral component that I often enjoy in beers like this - lightly grassy hops - but there is also a bit of vegetal character that detracts from the enjoyment and a slight sourness on the tail end - meh.

Rock Bottom Chicago The Mutiny
Rock Bottom Restaurants & Breweries pairing beer for this yearís CBS Chicagoland Brewpub Shootout, dispensed to my fest glass showing a golden hue, with a presentable layer of white head foam, and spots & streaks of lacing. The nose was citrus, and very noticeable pineapple. The taste included a pronounced, citrus & rind-like hop bitterness, with decent carbonation, in a body that was on the light side of medium. Bright & crisp! Paired with one of my favorites of the event: a beer braised chicken thigh, wrapped in brown sugar pepper bacon, and served on top of a corn bread waffle with maple beer glaze.

On tap. Poured clear, light amber with a short-lived white head. The aroma picked up sweet nutmeg and other pumpkin spice over caramel and biscuity malts. The flavor found lots of caramel and biscuity malts at the core, with mostly nutmeg and cinnamon laced throughout.. sharper, tangy spices on the finish.. not a lot of pumpkin. Light-medium bodied with moderate carbonation.. OK overall feel.. decent.

Tap, aged in Woodford Reserve barrels. Poured rich garnet with a short-lived beige head. The aroma picked up sweet roasted nutty and caramel notes joined by vinous notes and bourbon.. quite vinous as it warmed up. The flavor found tangy red wine and bourbon on the tip of the tongue, with sweet caramel and vanilla following.. lightly-roasty.. finished dry with lots of tasty barrel. Medium-bodied with low carbonation.. tart and tasty!

Pours beautiful for he style, hazy amber with a creamy brighter beige head. Aroma is light a west citrusy orange hops. Flavor and body are smooth and excellent for the style. It brings lightly zesty citrus hops and a tame malty body that complements the hops well. Thanks for the reco E.!

Rock Bottom Chicago Chardonnay Barrel 99 Problems
Location: Draft at Rock Bottom - Downtown, 6/25/14

Aroma: The nose is heavy boozy, wine barrels, and not much else
Appearance: Pours a murky dark orange color without much head or lace
Flavor: The flavor is all booze and wine, Saison flavors are completely overpowered
Palate: The body is okay, but it isnít great feel-wise either
Overall Impression: I didnít try the original version, but the barrel aged is a miss for me. What I want to taste in a Saison isnít here at all.

Location: Draft at Rock Bottom - Chicago, 6/25/14

Aroma: The nose is sweet, plenty of Belgian yeast, some spice, and a bit of hops
Appearance: This one pours a clear gold-orange color, with a white head and streaky lace
Flavor: This beer is sweet up-front, plenty of spice, and enough bitterness to keep it balanced
Palate: The body is medium, it has a lively carbonation, with a long, spicy, somewhat dry finish
Overall Impression: From a Ratebeer perspective, how is this not the same beer as the Orland Park one? Anyway, there is way too much carbonation here. This beer is okay, but it isnít great at all.

Sampler at brewpub. Apparently, this is supposed to be a smoked porter, but I could not tell while I was drinking it. Dark brown, tan head never fades. Lightly astringent alcohol leafy barrel with brown leafy malts. Alcoholic but too much sting or burn. Eh.

Cask at the brewpub. I am pretty sure this was a super old cask or someone vomited in here but Iíll rate it either way. Super cloudy dirty looking gold. This cask has been out took long. Ugh. Super flat and warm. Aroma is highly off putting extremely rotten apple and pesticide maybe, barf. Oh my god, the flavor is so disgusting. Cringe worthy. One of the vilest thing I have ever consumed.

Sampler at the brewpub. Color is clear gold, light bubbles race up the body. Aroma is strong and as expected with moderate banana and backed up by mild yeast dough. Sweetness there but not near sickening. Flavor more balanced by a stronger but not abrasive carbonation. I think this level of carbonation works great here. Much less sweetness and ester craze in the flavor. I am a lot more tolerant of Belgian styles and esters and sweetness than many others.

Sampler at source. Very dark brown color, not black. Thick head never fades, thick lacing as well. Aroma is strong with the hops. A mix of pine and citrus, not bitter.flavor is way flabby, not heft to the malts and the hops become generic. Just a light bitter touch at the end of it. It feels like the rug got pulled out from under me. Weird.

Rock Bottom Chicago Lupulo Negro
Draft on tap at the brew pub (Chicago, IL). Pours a deeper blackish hue, good brownish glow on the edges with cakey light brown head atop, sticks aroound as a firm cakey layer, laces well. Aromas are firmer rich citric and piney hops, decent toastiness, touches of cocoa and biscuit. Some gentle carmelization meets a firm hop character, pine and florals overwhelm, fresh and vibrant. Initial is dry, fariyl bitter with a decent body. Some cocoan gentle toasty and biscuity malts meet soem decent pine, florals and citrus fruits. Gentle tropical tinge into the body is enjoyable, lessens the edge a bit. Some cocoa, a bit of a firmer body on the backend with caramel, toast and biscuit, gentle pine and fruity hops. The bitter edge loses a step and overall falls behind a bit for my tastes. Decent soap, citrus and floral hops hit. A touch too big for me. The hop elements are enjoyable but the beer is just a bit too big, loses focus for me. The flavors are nice but the bitterness needs to come on a bitt more as we finish. Solid. Looks nice, smells nice.

Rock Bottom Chicago Shenanigoats
Pilsner goblet at the brewpub. Copper-amber color, clear. Aroma is all hops, I would have no idea this is meant to be a doppelbock. So lets pretend its a hoppy amber lager instead. The hops are all fruit punch hops. Clean low malt character behind that. Flavor is similar, slightly less bright and a bit of mild hop bitterness sneaks in. The bitterness grows a bit in the aftertaste. Long bitter fruit punch. Still no malt. Its not a doppelbock, maybe thatís the shenanigans.

[Tap] Golden color with a faint red hue. Very little head. Aroma of raspberry and perfume. Taste is heavy on perfume, with lighter grassy hops, medicinal raspberry flavors and straw. Thin. Hops definitely take a back seat to the fruit flavoring here.

Dark Red Brown. Big creamy beige head. Looks very nice. Nose of cocoa malt, traces of alcohol, caramel. Tastes more or less the same, but awfully sweet. Finish is quite tacky. Body is good. Quality is there. Too much unfermented sugar resides.

My 1700th US rate, woooo!!!!!. Sampler at brewpub. Very hazy amber color. Its the second haziest beer in my sampler (only behind the Wit). Aroma is all sweet and spicy rye, clobbers you over the head. Not my bag of tricks. The aroma is muddled, some esters from the yeast. Flavor is similar and nowhere as clean as the other beers in the sampler. Just too much rye and sweetness for me, sweet rye bomb.

Sampler at the brewpub. Definitely no butter in this batch. Pale gold to dark hay color. Aroma is muted hops, a mix bag, a little bit of this and that but nothing in particular stands out. Malt is a bit dusty. Flavor is similar with a moderate-mild bitterness coming through. Finish comes fast and easy. This is a decent Golden/APA hybrid (frankly, if I were to reenter this beer I would put it in as an APA). I just wish the hops were more directive.

Rock Bottom Chicago Double Down IPA
Sampler at the brewpub. This version uses Simcoe instead of Chinook and also comes in at 9.2 abv and 85 IBU. Dark golden color, halo lacing but not sticky at all. Aroma, SMACK on my nose with a strong hop mix that speaks to my inner hop-soul. Its all sweet mango tropical fruit sugar hops. There is just a hint of a little bit of grass underneath that. But I love this nose. It was made for me. Flavor loses some of that tropical punch due to a moderate- strong bitterness. Bitterness particularly takes over in the aftertaste by pushing such me of my tropical flavors out. Still a nice mix if you are looking for hop bitterness. Nicely lean malt behind all that.
