Republic of Boulder Lunch Pale Ale
I love the hop aroma of this beer. Assertive and tangy, with some powerful grapefruit, and other oily hop resins. Flavor is sweet and clean, with some breadcrumb maltiness. Enjoyable for a pint.

Republic of Boulder Red Rock Red
Draught. Head is mostly diminishing. Body is dark amber. Aroma is lightly malty (cereal), with notes of diacetyl and DMS. Flavor is moderately sweet, lightly bitter. Finish is lightly sweet, moderately bitter, husky/unclean. Medium body, watery texture, lively carbonation. Houston, we have a problem. I really couldn’t even figure out what style was being attempted here, as the character of the beer itself was awash in...shall we say...difficulties. Best not to say more.

tap at brewpub-pours black with a decent tan head. roast, dark chocolate and rum rasin on the aroma. smells pretty robust and much better than the looks of the other ratings. flavors of dark chocolate, molassas, rum rasin,. pretty decent if you ask me! the right amount of carbonation here. Probably their best beer of the evening!

tap at brewpub-alongside Ernest and Aubery-pours an orange hue with a decent white head. big citic twang aroma-peach, tangerine and pineapple. Tastes like a left hand pale/amber ale. similar yeast qualities which i cant stand! Some hops on the finish that were somewhat cardboardy.

tap at brewpub-pours a deep ruby amber hue with a small tan head. smells like a roasty porter. stale roast flavors probably been sitting in the fermenter/keg for too long. light peat moss or some flavor that mimics it. really dry finish!

tap at brewery-alongside Ernest and Aubery-pours a cloudy yellow hue with a small white head around the rim of the glass. estery, banana aroma, but is that artificial? the over-presence of the banana in the flavors suggests extract. lots of residual sweetness and a little metallic. not that good of a rendition.

Hazy orange with a thin head. Lightish body; lively carbonation. Pretty sweet hefe. Explodes with sugary banana and a little butter. Subtle hints of yeast and clove here and there. Very mild bitterness to tame the sweetness.

Republic of Boulder Got Wheat?
Virtually no head. Body is hazy medium yellow. Aroma is lightly malty (toasted grain), trace yeast (cobwebs), with notes of bubble gum, banana, and a hint of clove. Flavor is heavily sweet, moderately acidic. Finish is moderately sweet, lightly acidic, unclean. Medium body, watery texture, lively carbonation. Somewhat artificial nose that reminds one more of a banana Snapple drink than, say, a Weihenstephaner or Andechser Hefeweizen. That follows into the flavor with a weird saccharine-like sweetness that totally dominates the tartness, and leaves a residual tongue-coating film that I must say was unsettling. Was banana extract used instead of German yeast? I cannot say, but I can say this was not a particularly enjoyable rendition for my tastes.

Pale yellow. Yeasty, bread-dough malts were fairly light. Stark flavors from start to finish: weedy spices, cooked vegetables, curious chemicals, and musty earth. Must’ve been a bad batch. Infection?

Deep amber, with a frothy, fairly lasting head; sticky lace. Crisp and clean mouthfeel. Notes of toasted bread, nuts and rock candy. Grassy, bitter hops. Citrusy (mostly grapefruit) aftertaste.

Draught. Body is light yellow. Aroma is lightly malty (grain), lightly hoppy (flowers), with a strong note of insecticide, hint of coriander. Flavor is lightly sweet, lightly acidic, lightly bitter. Finish is lightly acidic, moderately bitter, very unclean. Light to medium body, watery texture, lively carbonation. Yiiiiiikes. This was scary bad. I know cream ales aren’t all that, but that’s not at issue here. This literally smelled and tasted like a gallon of Raid had accidentally fallen in the tank. Undrinkable, and extremely repulsive.

Republic of Boulder Mamas Milk Stout
Called Mama’s Milk Stout at the brewery. Dark brown body with some light at the bottom. Very thin filmy head... nose is chocolate syrup ice cream topping, more of that pure Vermont maple syrup and some sweet molasses. Semi-thick maple and chocolate flavors, different than most attempts, that can be said. Creamy and wet finish with some grittyness as well.

Republic of Boulder Fiery Lass Scottish Ale
Called Fiery Lass at the brewery. Dark brown color, perhaps even dark purple in the right light. Big maple syrup nose, and I mean pure Vermont maple syrup, not the imitation stuff in the Aunt Jemima bottle... but the real stuff with woody, earthy, gritty oily sweetness... where you can taste the tree. Sweet alcohol noticed in the flavor, with some cherries and plums... carbonated like a soda. Very sweet.

Clear amber with a light tan head. Nice medium hopped nose, sweet leafy oily hops, not unlike Sierra Nevada Pale Ale. Rusty metallic flavor at times... texture is slightly dry and abrasive, hoppy and a little sour. Not bad, though. Drinkable.

Murky light yellow color. Some corn and fuesal aromas, light body, just a little creamy... but really overpowered by some bad fuel flavors, along with some equally bad metal and soap notes. Leafy at times as well, like lawn clippings. Weird.

Republic of Boulder White Out
Called White Out at the brewery, December 2004. Clear amber color, darker than most witbiers with a big fruity bubble-gum nose with considerable hops... coriander, butterscotch and oranges. Semi-thick texture, a little alcohol noticed, more like a trippel than a wit at times. Nice even bitter balanced with a sweet vanilla and orange flavor. Peaches and some soapy flavors show up as well. Very well made.

Clear and medium amber. Thickish body. Sweet, honey-like malts. Spicy, flowery hops with a pretty big bitterness level. Notes of clove, orange and lemongrass. More along the lines of a Belgian golden or even a light saison. Style classification aside, it’s a pretty good beer on its own.

Very dark black. Syrupy-sweet and tar-like. Dark roasted grains complemented by a milky sweetness -- very creamy and sugary. Lesser hints of chocolate and coffee. Surprising amount of bitterness follows through. Overall, big sweetness and big bitterness seemed to compete for attention in my mouth. Pretty good, but heavy sweetness was a bit wearing.

Republic of Boulder Dunkel Weisse
Dark brown with a little reddish glow. Banana in the nose. Medium-bodied with a tingly carbonation ... drinkable texture. Dark and roasted malt flavors and aromas. Hints of dark chocolate. Some sourness and even a little tartness. Quite a bit of bitterness, which was uncharacteristic, but I kind of liked it.

Clear and golden; thin head. Light body; somewhat watery and thin at times; active carbonation. Light malts with mild flavors of cereal, bread and grains. Very mild sweetness. Hops were herbal, flowery and grassy. Bitterness level was too high, especially with the weak malt backbone ... a little unbalanced in that respect. Otherwise, it’s not too bad. Has a lot of potential.

From aroma alone, I wouldn’t have guessed this to be an IPA. In the mouth, it’s way out of balance (very bitter and sour, squashing the malt utterly). This recipe clearly needs some more work.

The name is a misnomer, as it’s quite deeply amber-colored...but even besides that, it seems more like a generic fruity Belgian ale than a true witbier (I’m not saying there’s no coriander or orange peel in this, but they're faint at best, and the overall impression of this beer isn’t witbier IMHO). So for now, I will leave this in the more general style category of Belgian Ale. If I were forced to rate this against witbiers, the score would drop to a 2.2 or so.

Draught. Head is fully diminishing. Body is light brown. Aroma is lightly malty (cookie), with notes of wood, apple, and allspice. Flavor is lightly sweet, lightly acidic. Finish is lightly acidic, lightly bitter. Light to medium body, watery texture, soft carbonation. At first I thought it might be a cask conditioned brown ale, but the oak presence was so out front that it may just be chipped (not to mention the head in the mug this was poured from was enormous). Has a slight holiday spice aroma as well. Rather thin and watery, though, and on the bland side. Interesting experiment, but this didn’t work for me.

I hate to run this brewer through the thresher too violently, as this is reportedly his first commercial brewing venture, having previously been a homebrewer. Perhaps brewing in much larger batches is proving a challenge? I’m being slightly generous with these ratings in the hopes that his skills will improve in the next year. The best thing is that he’s not making the same old brewpub lineup of pale ale, porter, stout, amber, golden ale, etc.

Very dark and thick and...well...kind of stoutish. Not bad per se, but not what I think of as a dunkelweizen.
